My friend told me that his grandmother use to make a dish called hamburger casserole. He remembers she put sliced potatoes in it along with rice, ground beef , tomatoe sauce, onions. Can someone tell me if this was a dish that maybe a relative or friend of yours use to make. I need to know the exact receipe.

Yep, it's a pretty standard crock pot or in-the-oven casserole recipe. I call it Super Supper.
2 lbs. ground beef
1 cup cooked rice
sliced raw potatoes
2 cans diced tomatoes
2 cups tomato juice
sliced onions
shredded cheese
*optional: fresh mushrooms


350F degree oven
-Brown ground beef in a skillet, drain grease.
-In two greased/Pam-sprayed casserole dishes, place sliced raw potatoes about 1/4 to 1/3 of the way up.
-Spread 1/2 c. cooked rice in each dish on the potatoes.
-Divide browned ground beef between the 2 dishes.
-Add mushrooms if desired.
-Put one can of diced tomatoes in each dish, on the rice, liquid and all.
-Cover with onion slices.
-Pour 1 c. tomato juice into each casserole dish.

Cover and bake for an hour.
After the hour is up, take off lids, sprinkle shredded cheese over both casserole dishes, bake uncovered for 15 minutes.

Optional:
As you layer the ingredients, throw in a seasoning on each layer, no particular order:
Pepper
Seasoned Salt
Cilantro
Cajun seasoning

Serve with bottle of ketchup, because it's pretty much a hamburger n fries meal in casserole form without the fried part!

My mother called it Chinese Pie, ground beef on the bottom, then layered with sliced onion, sliced carrots, green beans (can be adjusted with whatever veggies you prefer), topped with mashed potatoes, when almost done, top with shredded cheese. I would imagine you an put any ingredients in these type casseroles and adjust as needed. ;)
