I have an old cookbook in which many recipes call for CASTOR SUGAR. What is that? Also some recipes call for KIRSCH. Don't know what that is either

Castor is plain powder-sugar and Kirsch, is a liquor from Germany (can be from other places too) meaning cherry-liquor.

Castor Sugar is Finely ground Sugar!
And Kirsch is a Cherry Liqueur

Kirsch is the word "cherry" in German language. Probably the recipe refers to Kirsch Schnapps or Kirsch wasser, a cherry liqueur.
Castor sugar is icing sugar, very fine and disolves very quickly.
