Pumpkin Custards
This pumpkin pie flavored dessert is not only delicious but low in calories.
Servings: 4
• 2 egg whites, slightly beaten
• 1 cup canned pumpkin
• 3/4 cup fat-free evaporated milk
• 3 tablespoons granulated sugar
• 1/2 teaspoon ground cinnamon
• 1/8 teaspoon ground ginger
• 1/8 teaspoon ground allspice
• Dash salt
• Fat-free or light frozen whipped dessert topping, thawed (optional)
In a medium mixing bowl combine the egg whites, pumpkin, evaporated milk, sugar, cinnamon, ginger, allspice, and salt. Place four 6 ounce custard cups or ramekins in a shallow baking pan. Pour pumpkin mixture into the cups. Place the baking pan containing the cups on oven rack. Pour boiling water around custard cups in baking pan to a depth of 1 inch.
Bake in a 325 degree F. oven about 40 to 50 minutes or until a knife inserted near the centers comes out clean. Remove custard cups from water. Cool slightly on a wire rack. (Or cool completely in cups. Cover and chill until serving time.) If desired, garnish with whipped dessert topping.
Make Ahead Tip: Prepare and bake custards as directed. Cool, cover, and chill up to 24 hours. Serve chilled and, if desired, garnish with whipped topping.

20 NABISCO Ginger Snaps, finely crushed, divided
2 Tbsp. margarine or butter, melted
1 can (15 oz.) pumpkin
1/2 cup firmly packed light brown sugar
1/2 tsp. ground cinnamon
2 env. KNOX Unflavored Gelatine
1/2 cup fat free milk
2-1/2 cups thawed COOL WHIP FREE Whipped Topping, divided
MIX 1 cup of the cookie crumbs and the margarine. Press firmly onto bottom of 9-inch springform pan; set aside.
PLACE pumpkin, sugar and cinnamon in blender container; cover. Process until well blended; set aside. Sprinkle gelatine over milk in small saucepan; let stand 1 min. Cook on low heat 3 min. or until gelatine is completely dissolved, stirring occasionally. Add to pumpkin mixture in blender container; cover. Blend well.
TRANSFER pumpkin mixture to large bowl. Gently stir in 2 cups of the whipped topping. Spread over crust. Refrigerate at least 1 hour. Top with the remaining 1/2 cup whipped topping just before serving. Sprinkle with the remaining cookie crumbs.

Yes, I love it when they start having fall flavors and scents. I love pumpkin candles, I love the cool weather, I love the leaves, I love the fall festival that my hometown holds, I love having soup and sandwiches for supper....I just love everything about fall. And I get soooo giddy when I can feel it getting close. <---warm happy feeling. Last week we had an unusually cool couple of days, and I was getting super excited because it felt like fall.

Pumpkin Muffins! Make small ones that you can pop in your mouth. I find that we eat less of them that. Even though they are smaller, you still had one muffin!
