Never tried it- but this is on my million recipes CD. Hope it's delicious! Good luck!!
3 eggs, slightly beaten
3/4 c. sugar
1/2 tsp. salt
3 c. milk
1 tsp. vanilla
Mix the eggs, sugar, and salt. Add the milk and vanilla and pour into an unbaked pie crust. Bake at 450 degrees in a preheated oven for 30- 40 minutes, or until a knife stuck into the center of pie comes out clean. (For a coconut pie, add 1/4 cup shredded coconut.)

Here is an egg pie recipe that I found, it is an egg custard. There are so many types of egg pies including quiche. I hope that this helps you at least! Good Luck!!
EGG CUSTARD PIE
4 eggs, separated
2 c. milk, scalded
1 c. sugar
4 tbsp. flour, plain
1 tbsp. butter
1/4 tsp. nutmeg
1 deep dish pie crust
Separate eggs, mix sugar and flour together; add milk, butter, egg yolks and nutmeg.
Place all of this in a deep dish pie crust and put in preheated 400 degree oven until custard is firm.
Beat egg white and add 4 tablespoons of sugar for a meringue. Put on top of cooked pie and put back under boiler to brown a little.
For variations leave off nutmeg and add 1 cup of coconut and 1 teaspoon of vanilla flavor. Add a little coconut on top of meringue. For chocolate pie add 4 tablespoons of cocoa, leave off nutmeg and add 1 teaspoon vanilla.
Also, try this website. It has many breakfast egg pies and quiches as well. It may be a good resource for you! Happy cooking!!

mmmmmm! When its ready, can I come over ? I'll help you taste-test and eat. I've tried this from chinese bakeries close to my workplace, very very good, but just a little bland.
I think it would be AWESOME if you try cooking it with real, pure maple syrup instead of sugar or molases,
(but not the fake maple flavour syrup which is just corn syrup fructose and artificial flavour) !
