It means that to keep the product from turning dark from oxidation the item was treated with a sulfite. Studies have shown that it is harmless but it remains an urban myth that there is a problem caused by that.
i am sure if you go to a health food store you can find something with no sulfites that will quickly rot because it was not treated and that will cost you a lot more. it is like a tax on ignorance for people who choose to believe things that aren't true.

Sulphites are a common preservative in foods: especially wines. They are mostly harmless, however as with most things now a days some people suffer allergic reactions to them which is why labels are now being more explicit about what is in the food/drink.
