He gently bites my leg to tell me he is hungry every morning.
He has leaped up in the air and turned on a light switch to wake me up....he also plays with the door stopper to wake me up.
He gets on his hind legs and grabs the doorknob and tries to turn it when he wants to go outside....is this normal?

Yes! He can stand on his hind legs and stretches up and puts both paws on each side of the doorknob and tries to turn it! We watch him do it all the time - it is hilarious!

He is tall enough to stand on his hind legs and touch the handle?? No he is not normal, smart, but not normal.

Most cats are very intelligent. My cat says "out!" and "now?" Not quite in English, but I can tell that's what he's saying. He probably thinks I'm stupid because I can't understand other things he says. He's never turned on a light, and is too old and fat to try anymore, but he does point to the doorknob.
