Chocolate Ring Doughnuts recipe

ingredients
225 g (8 oz) plain flour
2.5 g (1/2 tsp) bicarbonate of soda
5 ml (1 tsp) cream of tartar
25 g (1 oz) butter
50 g (2 oz) soft brown sugar
50 g (2 oz) plain chocolate
5 ml (1 tsp) vanilla essence
1 egg, beaten
milk
oil for deep frying
caster sugar mixed with ground cinnamon



for the Icing
100 g (4 oz) plain chocolate
60 ml (4 tbsp) milk and water mixed
225 g (8 oz) icing sugar, sieved

method
1. Sieve the flour, bicarbonate of soda and cream of tartar into a bowl. Rub in the butter and stir in the sugar.

2. Melt the vanilla essence and chocolate together. Pour the beaten egg and chocolate into the dry ingredients and mix to a stiff dough, adding a little milk if necessary.

3. Knead very lightly and roll out until about 1 cm (1/2 in) thick. Using a floured ring cutter (or a large and small round pastry cutter) stamp out doughnuts. Reserve the centres.

4. Heat the oil to 182°C (360°F) Gas 4 and fry the doughnuts a few at a time until golden brown. Drain and cool. Cook the doughnut centres (called doughnut 'holes') - Drain. While still warm toss in caster sugar which has cinnamon added to it. Serve doughnut 'holes' warm.

5. To make the icing, melt the chocolate and liquid together. Add the icing sugar and beat well.

6. Spread icing over cooled doughnut rings. These are always best eaten on the day they are made.

2 tbsp yeast
1/3 cup water -- warmed
1 1/2 cups skim milk -- at room temperature
1/3 cup oil -- at room temperature
1/4 cup granulated sugar
2 tsp salt
2 tsp nutmeg
2 egg whites -- whipped
4 1/2 cups unbleached flour
1/2 cup egg white
1 cup sugar with 1 teaspoon cinnamon

Preheat oven at 450 after first and second rise.

To proof yeast, mix 1/4 cup warm (115) water with 1/2 teaspoon honey; stir and set aside until foamy.

In mixing bowl, combine proofed yeast, milk, oil, 1/4 cup sugar, nutmeg, egg whites, and 2 cups flour. Beat briskly until well blended. Add remaining 2 1/2 cups flour and beat until smooth. Cover the bowl and let double in size, about 1 hour.

Dust a board generously with flour and turn the dough mass onto it. This dough is soft and needs enough flour on the board to prevent sticking, but is easy to handle. Pat the dough into a round about 1/2" thick. Use a 3" doughnut cutter and cut out the doughnuts, placing them (and the doughnut holes) on prepared baking pans, 1" apart. These don't spread much; they rise.

Let the doughnuts rest and rise 20 minutes, uncovered.

Bake about 10 minutes, or a little longer, until they have a touch of golden brown.

Remove from the oven. On a sheet of wax paper spread cinnamon sugar.

Brush each doughnut and doughnut hole with egg white and roll in the cinnamon sugar.

CAKE DONUTS
4 egg yolks
1 c. sugar
1 c. milk
1/3 c. melted butter
1/2 tsp. cinnamon
4 c. flour, sifted
4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg
Use strictly level measurements!
Beat egg yolks; gradually add sugar. Beat until they're thick (use mixer). By hand, add milk, stirring slowly. DO NOT BEAT. Add melted butter slowly. Then add flour sifted together with salt, cinnamon, and nutmeg. Let stand about 10 minutes. Take portion at a time and pat out on lightly floured board. Cut out and drop in hot fat (325 degrees) on deep fryer.

GLAZE:
1/3 c. boiling water
1 c. confectioners' sugar
Combine glaze ingredients.

Mrs. Cordry Donut Recipe
I recently had the pleasure of making donuts and doing a demonstration for my son, Matt’s, fourth grade class. Mrs. Cordry and Mrs. Robinson were kind enough to let me come and hang with the kids for an hour and we all had a great time eating donuts!

1 1/2 cups milk
2 1/2 ounces vegetable shortening, approximately 1/3 cup
2 packages instant yeast
1/3 cup warm water (95 to 105 degrees F)
2 eggs, beaten
1/4 cup sugar
1 1/2 teaspoons salt
1 teaspoon freshly ground nutmeg
23 ounces all-purpose flour, plus more for dusting surface
Peanut or vegetable oil, for frying (1 to 1/2 gallons, depending on fryer)
Place the milk in a medium saucepan and heat over medium heat just until warm enough to melt the shortening. Place the shortening in a bowl and pour warmed milk over. Set aside.

In a small bowl, sprinkle the yeast over the warm water and let dissolve for 5 minutes. After 5 minutes, pour the yeast mixture into the large bowl of a stand mixer and add the milk and shortening mixture, first making sure the milk and shortening mixture has cooled to lukewarm.

Add the eggs, sugar, salt, nutmeg, and half of the flour. Using the paddle attachment, combine the ingredients on low speed until flour is incorporated and then turn the speed up to medium and beat until well combined. Add the remaining flour, combining on low speed at first, and then increase the speed to medium and beat well.

Change to the dough hook attachment of the mixer and beat on medium speed until the dough pulls away from the bowl and becomes smooth, approximately 3 to 4 minutes. Transfer to a well-oiled bowl, cover, and let rise for 1 hour or until doubled in size.

On a well-floured surface, roll out dough to 3/8-inch thick. Cut out dough using a 2 1/2-inch doughnut cutter or pastry ring and using a 7/8-inch ring for the center whole. Set on floured baking sheet, cover lightly with a tea towel, and let rise for 30 minutes.

Preheat the oil in a deep fryer or Dutch oven to 365 degrees F. Gently place the doughnuts into the oil, 3 to 4 at a time. Cook for 1 minute per side. Transfer to a cooling rack placed in baking pan. Allow to cool for 15 to 20 minutes prior to glazing, if desired.

Glaze

1/4 cup whole milk
1 teaspoon vanilla extract
2 cups confectioners' sugar
Combine milk and vanilla in a saucepan and heat over low heat until warm. Sift confectioners' sugar into milk mixture. Whisk slowly, until well combined. Remove the glaze from the heat and set over a bowl of warm water. Dip doughnuts into the glaze, 1 at a time, and set on a draining rack placed in a half sheet pan for 5 minutes before serving.

The best way to make donuts for my family is:

1 can biscuits
little cream
hot oil in pan
cup powered sugar

Cut out holes in biscuits
lay donuts into hot oil
turn when brown on oil side

remove donuts to platter
rub sugar& cream mix over donuts

RING DOUGHNUTS



Ingredients for 4 people

350 g (3 1/2 cups) flour

120 ml (1/2 cup) water
--------------------------------------------------------------------------------
1 tsp. salt
--------------------------------------------------------------------------------
6 tbsp. olive oil
--------------------------------------------------------------------------------
100 g (3 1/2 oz.) ground almonds
--------------------------------------------------------------------------------
1 tsp. ground cinnamon
--------------------------------------------------------------------------------
1/2 tsp. ground cloves
--------------------------------------------------------------------------------
Olive oil for frying
--------------------------------------------------------------------------------
For the syrup:

500 g (2 1/2 cups) sugar
--------------------------------------------------------------------------------
250 ml (1 cup) water
--------------------------------------------------------------------------------
1 tbsp. lemon juice


Method
Make the syrup by combining the water, sugar and lemon juice;
Cook over low heat for 3 minutes, remove from the heat and set aside.
Combine the flour, 6 tbsp. olive oil, salt and water. Work the ingredients together to form a thick and workable dough.
Roll the dough out into fairly thin strips, about 2.5 cm (1") wide and 10 cm (4") long. Seal the two ends of each strip together to form a ring.
Fry the doughnuts in plenty of hot oil. Once they are golden brown, drain on paper towels.
Dip the doughnuts into the syrup. Place on a serving platter and sprinkle with the ground almonds, cinnamon and cloves.
