I need to cook something in a closed caserole dish in the oven but don't have one. Can I substitute the caserole dish with what I think is the only alternative I have: large covered roasting pan (I use it for turkey's etc...). Thanks!

You could just use tin foil for a cover.
Just double it and 'pouf' it up so it doesn't touch to top of the casserole, then press it in around the rim.

if it is a large one do you want to make that much ...do you have a couple of bread pans they can be used by dividing into 2 and covering with foil.......then you can freeze one for later and all you have to do is put the pan in oven

definately! you could also cover any pan really with tin foil just mack sure its sealed tight.
