Most likely the warmth and humidity in the place it is stored. Perfect environment for mold! Slip in a paper towel and change it daily.

Heat, when you put a loaf of bread in a hot car, the heat from the car pull the moisture from the bread and condenses. I would eat it as soon as possible though, it can cause mold to grow too!

Humidity, Condensation. If it is sitting close to a heat source, i.e. toaster, oven, heat vent..... It gets hot, then in the cool down process, the heat turns to condensation. Sorta like Dew that falls on the ground at Dusk during the summer time. When the sun goes down the earth cools very rapidly, the heat in the atmosphere turns to liquid called condensation...or aka Dew. That is why the grass is wet at night and early morning. Until the sun comes up and heats it and it vaporizes again.
