SAUCY CHICKEN BAKE

6 chicken breast halves, skinned and boned
1/2 c. all-purpose flour
1/4 c. vegetable oil
1 c. orange juice
1/2 c. chili sauce
2 tbsp. soy sauce
1 tbsp. dark corn syrup
1 tsp. prepared mustard
1 or 2 cloves garlic, crushed
1 lg. green pepper, cut into strips
Orange slices
Parsley sprigs

Dredge chicken in flour; brown in oil in a heavy skillet over medium heat, turning once. Transfer chicken to a lightly greased 12 x 8 x 2 inch baking dish; set aside. Drain off drippings. Combine next 7 ingredients in skillet, mixing well; bring to a boil. Reduce heat and simmer 5 minutes, stirring occasionally. Pour over chicken; cover and bake at 350 degrees for 30 to 35 minutes or until tender. Garnish with orange slices and parsley. Yield: 6 servings.

Put 2 T olive oil in large oven-proof skillet. Add your chicken pieces and sautee on med-high heat 5 minutes on each side or until pieces get golden. Add chopped onion, green peppers, garlic, 1/2 t oregano, salt and black pepper and sautee 5 minutes longer. This is your base and from here you can sauce it up one of two ways:
add 2T flour to the pan, mix well while stirring over med-low heat, then incorporate 2 c water + chicken cube or broth; as soon as it starts to thicken up, cover and put in 325 oven for 20 minutes.
or:
you can add a creamy based condensed soup to the chicken like cream of celery, cream of mushroom before putting into the oven.
Even a third way, you can add a large can of plum peeled tomatoes in their juice to the chicken, and a cup of frozen peas. ...go wild and cut up a few potatoes...this will give you a complete casserole. My kind of cooking, I use what's on hand. Just watch the liquid content as it cooks in whatever method you choose so you can adjust with water if necessary.
