HERBED GREEN BEANS
1 lb. green beans or 2 (9 oz.) pkgs. frozen cut green beans
1/2 c. chopped onion
1/4 c. chopped celery
1 clove garlic, minced
2 tbsp. butter
1/4 tsp. dried rosemary, crushed
1/4 tsp. dried basil, crushed
Cut fresh green beans into 1 inch pieces and cook. (Cook frozen beans according to package directions.) Drain. Cook onion, celery and garlic in butter until vegetables are tender. Stir in herbs. Add beans; toss lightly. Cover; heat through. Season with salt. Serves 6-8.

Lemon Herb Green Beans Low Fat Recipe
Seasoned green beans make a great side dish for almost any main course. Herbs add great taste while fresh lemon peel keeps the green color bright.
Ingredients:
1-1/2 pounds fresh green beans
2 tablespoons butter
1 teaspoon basil leaves
1/2 teaspoon oregano leaves
1/2 teaspoon grated lemon peel
Directions:
Rinse and trim green beans. Add beans to boiling salted water. Cook, uncovered, on medium-high heat 7 minutes. Drain.
Return beans to saucepan. Stir in remaining ingredients. Let stand 5 minutes.
Recipe makes eight servings.

2 tablespoons butter or margarine
3 tablespoons lemon juice
1 tablespoon fresh parsley chopped
1 teaspoon salt optional
1 1/2 teaspoons fresh thyme chopped OR
1/2 teaspoon dried acorns (optional)
1/4 teaspoon paprika
Directions:
In a saucepan, cover beans with water; cook until crisp-tender.
Meanwhile, in a skillet, saute onion in butter until tender. Add lemon juice, parsley, salt (if desired), thyme and paprika. Drain beans; add herb butter and stir to coat.
Serve immediately.
