But I don't understand...should it be " Stoy muy feliz" because "Estar" is usually refers to a condition that could change in some way...and being happy could change because you might feel sad later.

First, it means I'm very happy.
Second, as you said, estar USUALLY refers to a condition that could change in some way... Usually, not always as a rule.
We also say "Soy un adolescente" (I'm a teenager) instead of "estoy un adolescente" though you will become an adult with time...
Estoy enfadado; I'm angry
Soy feliz; I'm happy
You can also say "estoy feliz", is totally correct. The diference I guess between "soy feliz" and "estoy feliz" is that the second one sort of implies that it's just this moment as if sometthing very jolly and nice has just happened to you.
But the thing is that although "happy" is normally translated as "feliz" I think it should be translated most of the times as "contento" (glad) cos I guess that when you say happy most times it means contento. Feliz, felicidad (happiness) implies in Spanish a much more deeper feeling than "Yes, I'm happy", or "Here,take the toy, are you happy now??", or "No more spaghettis thanks I'm happy with my owns..." or "I'm really happy to work for this company" (unless you're really, really, REALLY happy...) It's almost a philosophical condition..., so in all those cases u should translate happy as "contento".
We would say "Estoy contento" (not "soy contento"), as an opposite to I'm sad. Also, estoy bien, estoy alegre, or even, yes, ESTOY feliz!!, in these cases.

soy feliz means I am happy in the sense that I am a happy person.
estoy feliz means I am happy at this moment in time.
I guess Ser is more of a permanent state and estar is not.
Happiness can change but in general when you are talking about it, you want to think that it is forever.
Both ways are right, the meaning is a little different.

You can use both but it is more proper to use Soy, soy has to do more with a continuing state of being happy ( or whatever the state of mind or feeling ) or if it was in the past but in an undetermined period it is more used Fue ( past tense of soy ), and estar is more of the moment and if you say " she was very happy when I saw her " it is "ella estaba muy feliz cuando la vi " this is better understood with practice. Perhaps this exmple helps You are Kim that is Tu eres Kim is the right translation but Tu estas Kim is the wrong translation, get it?

Soy muy feliz means I'm VERY happy. Soy being a personal noun. Estar is a verb...

Soy feliz would mean that you are a happy person. Permanently.
Estoy feliz means that you are happy right now. General usage is estar, not ser.

When you say I am very happy in english, it is not a condition that will last, so saying Soy which is I am is the same thing. Estar is another way of saying... There is no wrong answer. Personally I would sau soy.

This is incomplete; you still need something after "muy". As a snippet, "Soy muy" merely reads "I am very..." Note that "Soy" is from the verb "Ser" meaning it indicates a more permanent state, as opposed to "Estar" which, for ease of explanation would be more something temporary (Estoy muy...) What, for you, comes next after soy? "Soy muy delgado" (I am very thin?) "Soy muy alto" (I am very tall?) Whatever it is, be sure it is in agreement with respect to gender.

If the condition will remain forever which is impossible, it has to be Soy muy feliz, if it is jus for a moment or time is ESTOY
