I purchased some medium mature white cheese and cut it into 2 pieces andput into freezer.

It has been wrapped in tin foil and kept if fridge for about 2 days, I have noticed a white powdery substance on a couple of the cheeses side, there is no usual mould, just white stuff. Can anyone tell me if it is safe to eat. Thankyou.

hard cheeses lose salt and calcium through the white deposit on the side, it is perfectly safe, it just looks horrid. slice it off and carry on eating the remainder of the cheese.

All hard cheeses are freezable as long as they are well wrapped against freezer burn

This is the reason that you're not technically supposed to freeze cheese. It won't hurt you if it's straight out of the freezer, it's just freezer burn - but in general do make sure it's not mouldy before you freeze it, then you'll definitely know it's safe to eat.

If you are going to freeze it, make sure you eat it straight away though - they can go mouldy or sweaty and neither is good. I'd probably chuck it, white powder on cheese can be mould too.

It is quite safe to eat - it is just an indication that the cheese is about to go mouldy . I buy mature cheddar, and after a few days this white powdery coating forms. It might be another week before the cheese actually starts tasting funny.

If you want to slow down that white mold. Put your cheese in an airtight tupperware with the bottom lined with raw, spiral or elbow pasta. The pasta acts as a humidor and keeps the moisture off the surface of the cheese.

Slice the side with the white stuff off and bin it - the rest should be ok.

I do it all the time - I think its a mould but I am not sure but the rest of the cheese will be fine.

I wasn't aware that one could freeze cheese, maybe that's your problem. Cheddar doesn't usually go moldy in the fridge for me, it just goes hard and stale.

If it is like mildew it's mould.
If it is bitty and crumbly it is lactose drying out from the milk.
You could eat either but I would settle for the second one!

It might be a bit of mold, or it might be freezer burn. Either way, it's safe. Slice off the offensive bits and munch away!
