It`s called "dulce de calabasa" My husband loves it. I know it`s made of other kinds of fruit also.I`m just not sure what kind.

DULCE DE CALABAZA (Candied Pumpkin)

Ingredients:
1 pumpkin, cut into uniform pieces (peeled with center removed)
1 tablespoon quick lime (see note)
1 quart cold water

Soak pumpkin overnight in lime water, (water should cover pumpkin). To make lime water dissolve quick lime in cold water.
The next day, remove pumpkin from lime water and wash 3 times in clear water. Cover pumpkin with warm water and bring to boiling point, boiling for 5 minutes.
Drain pumpkin and wash twice in clear cold water. Allow pumpkin to drain 1 hour.
Pierce each piece in several places with a fork. This allows the sugar syrup to penetrate when cooking.
Weigh pumpkin and use equal amount of sugar when cooking. Place pumpkin in a pot and cover pumpkin with sugar. Moisten sugar with water and cook over very low heat until pumpkin becomes crystallized - approximately 3 hours at 300 degrees F.

Note from Nina: This is "Calcium Hydroxide" available at hardware stores. This is a very tasty Mexican candy.

DULCE DE CALABAZA EN TACHA (Pumpking cooked in brown sugar)

Ingredients
1 medium squash
3/4 kg guava
1/2 kg sugar cane
1 1/2 kg. brown sugar (or 2 l/2 kg piloncillo)
cinnamon and clove to taste
3/4 liter water

1. Wash all the fruit, cut them in big pieces, leaving the seeds
2. Peel the sugar cane and cut into thin pieces, the guavas in half
3. In a large pan heat the water and add the squash, the brown sugar, the cinammon, the cloves and the cane.
4. Cover and cook the squash at low heat. Stir periodically so it doesn't stick.
5. After 20 minutes add the guava.
6. It is ready when the squash is soft.
7. Brown some sesame seeds and sprinkle onto the squash.
8. Serve with milk.

1 Qt pumpkin, cubed.
ut the pumpkin in a pan and cover with water. Bring to a boil and cook 15-20 min.
Drain, but save the liquid-approximately 1-1/2 Cups of liquid. Mix liquid with 1 Cup brown sugar. Pour over the pumpkin and boil for another 15 min. Let pumpkin stand overnight in syrup.
The next day, boil the pumpkin pieces for another 5 minutes. Take them from the syrup and set them on a waxed paper lined tray. Let them dry for about 10 hrs then roll them in granulated sugar.

NORMA'S PUMPKIN CANDY

1 large pumpkin
2 tbsp. mason lime (cal) per quart of water
sugar
Note: weigh pumpkin after seeds are removed, and use equal amounts of sugar (4 lbs of sugar to 4 lbs of pumpkin.)
Cut pumpkin (do not peel) just clean inside and save the seeds if you wish to make pepitas. Cut the pumpkin into 3 x 1/2 inch pieces. Use a large glass container for the lime water.

Cut the pumpkin into 3X1/2 inch pieces. Do not remove the outer skin just clean the inside. Save the seeds if you want make pepitas.

Use a large glass container. Measure a quart of water and stir well the lime. Pour and it should cover the pumpkin slices. Make another quart of lime water and pour over the pumpkin slices until all the pieces are under water.

You may have to place a big plate to weigh the pumpkin down. Leave the bowl overnight and stir if the lime goes to the bottom of bowl.

Weigh the pumpkin after removing from lime water or you may weigh before the lime bath. Rinse the pumpkin pieces at least three times to remove lime. Place pumpkin pieces into a large pot and add warm plain water to cover pumpkin pieces. Cover pot. Boil for 5 minutes.

Drain and wash twice in clear cold water. Drain for 1 hour (use a colander).

Peel the skin, pierce each piece with fork or toothpick in several places, dip the pieces into sugar syrup (in a separate bowl put equal parts sugar and water to make syrup).

LANUIT has given a great answer...
Actually dulce de calabaza (and other fruit) is just candied fruit, done more or less the same way the fruit that goes into a fruitcake is prepared,.
You could make something very similar with yams or sweet potatoes (tastes almost the same...just as yummy).

The only thing, I'm not sure you would need the limewater for other types of fruit or vegetables.

Both are good for you, each fruit/vegetable has different vitamins. Therefore as more variety, as better. Vegetables have generally less sugar than fruits.
