Hi there, here's a Delia recipe. Never tried but looks about right
Makes enough for four 6-7 oz (175-200 g) pieces of fish
4 oz (110 g) self-raising flour
½ teaspoon salt
5 fl oz (150 ml) water, plus 1 scant tablespoon
Just sift the flour and salt into a mixing bowl, then gradually add the water, whisking continuously until the batter is smooth and free from lumps.

Batter-Fried Fish--Vegetable oil or shortening--1 pound sole, pike or other fish fillets--1 1/2 cups bisquick, original baking mix--1/2 teaspoon black pepper--1 large egg, beaten--1 cup beer or "Club Soda". Heat oil (2 to 3 inches) in deep fryer or Dutch oven to 375 degrees. Cut fish fillets in serving pieces. Mix baking mix and pepper in medium bowl. Stir in Egg and beer or soda to make thinck batter. Dip fish into batter. Fry a few pieces fish at a time in oil about 5 minutes or until fish flakes easily with a fork and is deep golden brown. Drain on Paper Towels. Enjoy!!

Here's a good one:
4 to 5 ounces of flour
1 egg
1/2 cup of milk
1 pinch or 2 of salt
1 teaspoon baking powder
Beat the egg until frothy, then add the milk, and beat until well mixed.
Add the salt and baking powder to your flour. mix well.
Next add the flour to the liquid a little at a time, while beating constantly. (Add as much flour as you need until you get the right consistency, it may take all 5 ounces, but you may need a little less). Let it sit a little while, so that the baking powder will "go to work" and make it "fluffy" when frying.
You can also do the batter with water, but with milk, the batter is richer.
For a sweet batter (say for fruit fritters), add a tablespoon of sugar and half a teaspoon of cinnamon.

I like the idea..... Ingredients: 1 bag frozen plain French Fries Plain flour ***Batter*** 1 cup boxed pancake mix 2 cups beer ***Seasoning*** 1/2 teaspoon black pepper 1/2 teaspoon ground ginger 1/4 teaspoon dry mustard 2 tablespoons seasoned salt Directions: Prepare batter. Combine seasoning mixture and store in a tightly covered container. Allow 1 tsp. seasoning (we use much more) for each cup of prepared batter. Without thawing, open bag of fries and dust them lightly but evenly in flour, letting them dry on waxed paper lined cookie sheet for a few minutes. Coat the floured fries evenly in the batter and fry in small portions @ a time in 385 degree oil @ least 2" deep in pan. Turn fries once to brown evenly. Remove with tongs to drain on paper towel lined plate. Serve at once. The batter can be repeated as needed to coat the frozen fries. Fajita Fries- Add 1/2 tsp. ground cumin in each cup of prepared batter that includes the seasoning mix given above.

Dip fish in flour, then in beaten egg. Next dip in Drake's seasoned flour. Drake's adds nice flavor and is available in most grocery stores in the baking aisle. It's an orange and brown box.
You can use it for chicken, shrimp, round steak, pork chops, etc.
