Swiss Steak--3 Tablespoons Flour--1 teaspoon ground mustard (dry) 1/2 teaspoon salt--1 1/2 pound boneless round, tip or chuck Steak, about 3/4 inch thick. 2 Tablespoons vegetable Oil. 1 can whole tomatoes (undrained). 2 Cloves Garlic--finely chopped. 1 cup water, 1 large onion, sliced. 1 large green bell pepper. sliced. Mix flour, mustard, and salt. Sprinkle half of the flour mixture over 1 side of beef; pounded in with meat mallet. Turn beef and pound in rest of flour mixture. Cut in serving pieces. Heat oil in skillet over medium heat. Cook beef in oil about 15 minutes, turning once until brown. Add tomatoes and garlic, breaking up tomatoes. Heat to boiling; reduce heat to low. Cover and simmer about 1 1/4 hours, spooning sauce occasionally over beef, until beef is tender. Add water, onion, and bell pepper. Heat to boiling; reduce heat to low. Cover and simmer 5 to 8 minutes or until vegetables are tender. Enjoy!

My mother used to make this occasionally, and it was a good way to make a rather poor cut of meat palatable.

Pound the steak to tenderize, and roll it in seasoned flour (about
a teaspoon of salt and pepper to the cup of flour). Dust off the
excess.

Heat a skillet (which has a lid) with 3-4 tablespoons olive oil.
Brown the steak on both sides.

Add chopped onions (about one medium onion is usually about right) and canned whole tomatoes, including the juice.

Put on the lid and let simmer for 1 to 11/2 hours.
Add a chopped bell pepper, and continue to simmer for a quarter to a half hour.

Check for seasoning (salt and pepper) and add more if needed.

This is the basic recipe. You can always experiment with white wine, garlic, and other herbs to customize the flavor.

I make swiss steak in the crockpot but first I cut up and brown a nice round steak, then add to crockpot with a couple large green peppers cut in rings, and a large onion cut in rings. Add a can of diced tomatoes, and a can of mushrooms if you like mushrooms. Usually, I add oregano or italian seasoning, salt and pepper and let cook for about 7 hours. This is great over rice or mashed potatoes. Good luck and enjoy!!

I use round steak, cut into individual serving slices and place in bag of seasoned flour (salt and pepper to taste or season salt), shake and dust off the excess flour. Place steak in a hot skillet with about 3-4 tablespoons EVOO and brown the steak on both sides. I then remove the steak and place sliced onions and green peppers in the pan (I put veggies on the bottom so that the steak don’t stick to the pan), return the steak to the pan, cover with canned stewed tomatoes, including the juice. Put on the lid and let simmer for one to one and a half hrs. You can make a paste of flour and water to thicken the gravy. The cooler months are upon us, 'comfort foods' appreciated. ;)

SWISS STEAK

2 cuts round steak or sirloin steak
1/2 tsp salt
1/2 tsp pepper
1/2 cut flour
1 package brown gravy mix
1 package onion soup mix
1/4 to 1/2 cup oil
2 cups water

Cut steak into serving size pieces. Mix salt, pepper and flour in zip lock bag. Add steak pieces and shake to coat. Brown steak in small amount of oil. Scrape pan for drippings. Remove steak pieces and place in 9 x 11 pan.

Add remaining flour to drippings. Add soup mixes and water to make gravy. Pour gravy over steak.

Cover and bake at 250°F degrees for 2 hours.

Serve with potatoes, rice or noodles as desired.

Hungarian Swiss Steak

Prep Time:5 min

Makes:4 servings

1beef boneless sirloin steak, 3/4 inch thick (1 pound)
1/4teaspoon peppered seasoned salt
1can (14 1/2 ounces) stewed tomatoes, undrained
1tablespoon paprika
2tablespoons ketchup
1/4teaspoon caraway seed
1/2cup sour cream
Chopped fresh chives, if desired

1.Cut beef into 4 serving pieces. Sprinkle both sides of beef with seasoned salt.
2.Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook beef in skillet 4 to 8 minutes, turning once, until brown.
3.Stir in tomatoes, paprika, ketchup and caraway seed; reduce heat. Cover and simmer 15 to 20 minutes or until beef is tender. Top each serving with sour cream and chives.

take a dutch oven or even a roasting pan and take your steaks tough cuts even chuck steak works well.....flour with salt and pepper and onion powder...be sure and coat very well. now fry(use 1/2 oil and 1/2/butter) until brown remove the steaks and deglaze the pan with a cup of red wine then add 2 cups of beef stock ......1 cup onions sliced 1 bell pepper slied also in strips and 2 cups of diced fresh tomatoes ...i like to use plum tomatoes and they are not as expensive as others....now either cover or place the lid on and set in oven at 275 for 2 hrs...but for the last 1/2/hr add 1 cup sliced mushrooms and a cup of leeks sliced into 2 inch strips and salt and pepper to taste .....garnish with fine leek topscut into thin strips

Easy Swiss Steak Recipes
QUICK AND EASY SWISS STEAK

4 med. sized cubed steaks
1 onion, sliced
1 can cream of onion soup
1 can beefy mushroom soup
2 tbsp. shortening
1 can water

Brown cubed steaks in shortening. Place in baking dish. Cover with sliced onions. Mix together onion and mushroom soups and water. Pour over onions and steaks. Bake in 325 degree oven for 45 minutes or until onions are cooked.

SWISS STEAK OVER WILD RICE

Coat steak with flour, salt, pepper, garlic salt and then brown steak in hot fat. In a saucepan bring to boil 1 large can tomatoes, 1 small can tomato sauce or paste and 1 large cut up onion. Place meat in roasting pan and cover with tomato mixture. Put lid on pan and bake at 350 degrees until tender and serve over Uncle Ben's long grain and wild rice. Rice prepared as follows: 6 ounce package according to directions (except) substitute 1 cup beef bouillon and 1 1/2 cups water for the 2 1/2 cups water that is called for the package. Combine rice with 1/4 pound sliced fresh mushrooms, which have been saute in a little butter.

3 tbsp. flour
1 lb. beef round steak, 3/4 inch thick
3 tbsp. dry onion soup mix - shake
mix before measuring
1 tbsp. brown sugar
3 tbsp. water
1 tsp. prepared mustard
1 (8 oz.) can tomato sauce

Sprinkle half of flour on one side of meat; pound in with rolling pin or meat mallet. Turn meat and sprinkle with remaining flour; pound with rolling pin. Cut into 4 serving size pieces. Arrange in 8 inch square microwave baking dish. In small bowl, combine all remaining ingredients, blend well. Pour over meat. Cover tightly with microwave safe plastic wrap. Microwave on medium for 12 to 17 minutes or until meat is almost tender. Let stand tightly covered for 10 minutes. Serves 4.
