If you want a very simple, cheap, but extremely elegant meal follow these directions.
1 fillet of rainbow trour or atlantic pink salmon per person OR 2 small chicken breasts per person
1 large red onion cut into circles
1 bottle of Kraft: Balsamic Vinagrette
1 bottle of seedy dijon mustard (Earls is good)
1 bag of baby spinach per 3 people
First, cut up the onion into large circles (cut the onion whole and pop the pieces out of each other)
sautee them in a little bit of vegetable oil until they're soft
add in 1 tblsp of the dijon mustard, 2 if you're feeling lucky
add in 1 cup balsamic vinagrette and half a cup of warm water. allow everything to simmer for about 20 minutes or until it's thickened up a little bit\
In a separate pan, brown the chicken with a bit of veg. oil. Just for about 4-6 minutes on each side. (If you're using the fish, you're going to want to make sure the oils about an inch high and it's been on the high heat a while- cook each side for 8 minutes)
Take the spinach and rip it up a bit so that the leaves aren't too big. Set it up on the plates you'll be serving the dinner on.
Note: do NOT add the fish to the dressing while it's simmering. Cook the fish in a separate frying pan. However if you're using chicken, you may add it to the dressing while it's simmering. It sucks in the flavours and makes the chicken juicy.
Dress the bed of greens with some of the warm vinagrette you've made - make sure some onions get in as well. You may also transfer the dressing and greens in to a large bowl and pre-mix them, however you won't have the opion of more or less dressing.
Finish by placing the chicken breast (or fish) on top of the bed of greens, and lay another couple of spoonfulls of the dressing on top.
All of this prep and cooking normally takes me about 30 mins, and i always get compliments on it. It looks like something that would cost 45 dollars a plate in a restaurant, but it averages out pretty cheap and its delicious... and healthy! (If your grandparents are wine drinkers, a dry red wine goes great with this)

Easy Chicken Tetrazzini 1 lb boneless chicken breasts or a whole chicken cut up 1 lb spaghetti small velveeta 1 can rotel tomatoes 1 can cream of chicken soup In a large pot of boiling water seasoned with salt, pepper, garlic power and onion powder place (or use fresh garlic and onion minced) place chicken and cook gently til done (about 20 minutes) Remove chicken from water and return water to a boil. Add pasta and cook til aldente Cool chicken and cut into bite size pieces In a small pot put soup, cheese and Rotel and melt slowly together Drain pasta and place in a large casserole dish and mix in chicken and cheese mixture. Bake at 350 for about 10-15 minutes til bubbly and serve with some crusty bread. This freezes exceptionally well so make a double batch and freeze one without baking. When cooking later be sure to defrost before baking. Yummy!!! a family favorite.

This is a very easy dish that looks and taste sensational -
Glazed Baked Chicken -
4-6 skinless chicken breasts in baking dish - meat side up
Mix in bowl -
1 bottle Russian dressing
1 jar of Apricot preserves
1 pkg of Lipton Onion Soup Mix
Pour this mixture over the chicken.
Cover the pan with foil and bake in 350 degree oven -1 hour.
Ever 15 minutes or so - open up the foil and baste the chicken with the sauce in the pan.
When done - pour this over rice. You can serve this with a salad or with veggies. Your grandparents are gonna love this!

One of the first dishes I cooked was orange chicken. Saute chicken breasts in large skillet in butter or cooking oil. Pour a small can of orange juice (thawed) with a little water over all. Cover (baste occasionally with the juice), cook about 1/2 hr - 45 minutes until cooked through. You could add sliced mushrooms during the last few minutes of cooking, if you like. Serve on a large platter over a bed of rice (pilaf) surrounded by (canned) mandarin oranges. Top with slivered almonds and green sliced onions (optional). with a salad and dinner rolls, dessert of choice & Voila - Dinner.

Roast chicken, mashed potatoes, vegetables, gravy.
Put the chicken in the oven at 340 with a half lemon inside of it and a little salt and rosemary sprinkled on top for about an hour.
Boil the potatoes until tender, then mash with butter and a little milk.
Get some fresh green beans or zuchinni and boil them for about five minutes.
Find gravy packets by Knorr at the market and your all set.

Your grandparents will love any meal you make for them, I'm sure.
Here's something simple and healthy.
Meatloaf, with Roasted Potatoes, and Green Beans
Meatloaf
1 pound ground beef
1/2 a pound ground sausage (or 1 package of Jimmy Dean sausage)
1/2 chopped onion
1 8 oz can tomotato sauce
2 cloves of garlic, chopped
1 teaspoon dried sage
1 egg
1/2 cup uncooked macaroni
1 tablespoon black pepper
Mix everything in a bowl, using your hands (mixes better, make sure to wash your hands first)
Place into a deep baking dish, glass is fine. Shape the meat mixture into a loaf shape, or square
Bake for 1 to 1 1/2 hours at 400 degress, drain the fat out, before slicing and serving.
Roasted Potatoes
4 to 5 baking potatoes (russet) cut-up in chunks, leaving the skin on, washed, then dry on paper towels.
1/2 a yellow onion, chopped
1 clove of garlic, chopped finely
1 tablespoon dried Oregano
1/4 cup of olive oil
1/2 teaspoon of salt
1 teaspoon ground black pepper
Mix everything well in a bowl, covering all the potatoes.
Place on a cookie sheet, and bake at 400 degrees for 30 minutes, stirring them up every 10 minutes. Time them with the meatloaf so they are ready at the same time.
Green Beans
1/2 a package of frozen green beans with pearl onions included, defrosted (if you cannot find those, regular green beans are great)
When your meatloaf and potatoes are almost ready, on a low heat in a skillet, cook your defrosted beans, drained of all water, in a tablespoon of butter, and a tablespoon of olive oil, (any oil is ok)
add a pinch of salt, and pinch of black pepper
Serve on seperate plates for your grandparents, or put each dish on a plate, or platter, with utensils for serving, as they do in a family style.
Serve with warmed french, or Italian bread, sliced, to the meal
Have a good time with your Grandparents. It's so nice of you to want to cook for them.

The suggestion for Spaghetti with Meat Sauce, and Garlic Bread, along with a tossed salad is best if you are challenged and this is for your grandparents. This is very easy (in fact, you can use one of the ready-made sauces in the stores for the meat sauce, and there are already pre-packaged mixed salads there too), all you have to do is the Spaghetti, and then add salad dressing that they like.

Chicken and dumplings. Boil and dice the chicken, add vegetables and flour to thicken it. Dot biscuit or bread dough over the top and cover as it cooks in the oven or kettle. You're a good person to cook a meal for your grandparents, have fun!

Bake chicken breasts in oven....350 degrees for about 1 hr. to 1hr. and 15 min...just place in a cake pan...put a little butter on them...salt & pepper...and bake.you can cover it with foil...so it doesnt get too dried out)..that's easy...you can buy some instant mashed potatoes...fix according to directions on box...(easy) then make a vegetable..like corn...buy a bag of frozen corn...put about 1-1/2 cups water in saucepan...cook about 1/2 to 3/4 bag of corn...just salt & pepper..put a spoon of butter in the pan..cover...bring to a boil...turn down heat and let cook about 10 minutes...you can get an envelope of gravy mix...cook (directions will be on back of mix)...you will have that for the mashed potatoes...you can make some little dessert too, if you like. Maybe pudding or cookies or icecream...Good luck!

roast chicken [ clean the chicken inner and outside....lightly oil the outside of chicken, add some salt,garlic powder,parsley, on the skin and put in oven 350 degrees , cover with foil and cook for 1 hour. turn the oven off and take foil off and let brown in oven....
mashed potatoes
peel potatoes and cut into small pieces and put in a pot and fill the water and boil on medium heat until cooked[to test put a fork into the potato's and if soft it is done....drain the water, and mashed them, add butter and a little milk to make them blend...... season to taste
for a veggie, you can take a can of peas and a can of cream corn and heat up together.
for a light salad,
cherry tomatoes, and cut cucumbers, parsley
and cut spring onions and add Italian dressing and serve...
