I'm looking for a recipe for a very light, fluffy frosting recipe. It's almost like whipped cream, but doesn't need to be refrigerated. The cupcakes in grocery stores often have them.

EASY & GOOD FROSTING

1 c. sugar
2 egg whites
3 tbsp. cold water
1/4 tsp. cream of tartar
Pinch salt
3-4 marshmallows
2-3 tbsp. powdered sugar
1/2 tsp. vanilla

Combine in double boiler the sugar, egg whites, water, cream of tartar and salt. Heat and beat until it forms soft peaks. Add 3-4 marshmallows and beat until melted. Add powdered sugar and take off fire. Beat until stiff. Add vanilla. This will cover an angel food cake. Can be used on other cakes too.

Well, my frosting isn't like the whipped cream stuff in the stores, but it is very good. Give it a try if you would like. Its really simple.

*Buttercream Frosting*

1 cup butter (or 2 sticks)
1 cup Crisco
approx. 2 cups of powdered sugar
3 tablespoons of flour
1/4 cup of milk
2 teaspoons of vanilla
1/4 teaspoon salt

In one big bowl: cream the butter and Crisco until it is fluffy. Slowly add in the sugar, flour and salt. Lastly add in the vanilla and milk. Whip it until it is really fluffy. Sometimes it needs more sugar, it depends on how sweet you want it. Takes maybe 10 minutes total.

It goes great with chocolate cake!

At Smart and Final they carry a product called "Pastry Pride". It comes in vanilla and chocolate. It is in the freezer section and the packaging looks like a quart of milk. I'm not sure if it needs to be kept cool after you beat it and frost the cake tho'.
If you have a bakery supply store near you, you might try to find a whipped cream stabilizer or you can ask the grocery store if you can buy a container if the icing you like.

Carmel Frosting:

1 stick (8 tablespoons) butter
1 cup packed dark brown sugar
Sprinkle of salt
1/4 cup whole milk
2 cups powdered sugar, sifted or fluffed up (not packed)
1 teaspoon vanilla extract



Place butter, brown sugar and a tiny pinch of salt in a medium-size heavy saucepan over medium heat. Stir and cook until the mixture comes to a boil (this takes about 2 minutes). Add the milk, stir and bring the mixture back to a rolling boil, then remove the pan from the heat. Add the confectioner?s sugar and vanilla and beat with a wooden spoon until the frosting is smooth; it will be a loose consistency. Use a whisk if you need to, to get rid of the tiny white sugar lumps.

Use immediately, while still warm, to frost the cake of your choice. It is a loose, pourable frosting when first made. If you make it ahead of time, it will harden and you won?t be able to spread it. If it does harden too much while you are frosting the cake, simply place the pan back over low heat and stir until the frosting softens up.

That is whipped topping. You can purchase it from the bakery department in the grocery store. I purchased the icing - really sweet kind - for my wedding cake.
