Chinese Orange Chicken
Serving Size : 3

CHICKEN
1 tablespoon Soy sauce
1 tablespoon Rice wine or dry sherry
2 teaspoons Cornstarch
1 1/2 teaspoons Minced fresh ginger
1 teaspoon Sesame oil
1 pound Boned and skinned chicken -- cut into 1/2-inch cubes

GARNISH
2 teaspoons Minced fresh orange peel

SAUCE
2 tablespoons Chicken stock
1 1/2 tablespoons Soy sauce
1 tablespoon Rice wine
2 teaspoons Cornstarch
1 teaspoon Sesame oil
1 pinch freshly ground white pepper
1/4 cup Peanut oil
6 snow peas -- (up to 8) sliced in thirds diagonally
Cooked rice

Combine first five ingredients in small bowl. Add chicken and toss to coat well. Cover and marinate at room temperature at least 30 minutes, stirring occasionally.

Soak orange peel in enough water to cover, about 5 minutes. Drain and set aside.

Combine stock, soy sauce, rice wine, cornstarch, sesame oil and pepper. Set aside.

Heat 1/4 cup oil. Drain chicken. Stir fry in small batches, about 2 minutes. Remove. Heat peanut oil with orange peel; stir fry 1 minute. Return chicken to wok with snow peas and soy mixture; stir fry 3 minutes.

Serve immediately over rice

Well, yes I do. One of my favorite Chinese dishes, in fact.

Chinese Orange Chicken

4 boneless, skinless breasts of chicken, chopped in good size chunks
2 cups of orange juice, no pulp (if you cant find a no-pulp orange juice, strain it in a colander)
3 minced garlic cloves
4 to 5 (depending on how hot you like the dish) dried cayenne peppers, whole (these are found packaged in your grocery store in the dried spice section, you can use pepper flakes, but its not the same, if you must use them, you need 3 tablespoons)
Flour, about a cup, season it with black pepper, and salt, a teaspoon of each
1 large ripe sweet orange, 2 small tangerines may be substituted
grated orange zest
Plenty of corn, or vegetable oil, to deep fry your chicken (not olive oil, its too strong, and will take away the flavor of the orange)
1/2 cup of granulated sugar
1 cup water
1 tablespoon orange juice (seperate from the 2 cups for the marinade)

Marinade

Zest (grate) one orange, with a cheese grater (no whites of the rind, only the orange skin)
Take off the tops of the cayenne peppers
Section the orange, meaning peel them and separate into the sections
In a bowl or deep pan put every thing into it, except the flour
marinate covered overnight for the best flavor, unrefrigerated(stronger flavor that way)

Drain the chicken, and other ingredients of the orange juice, keep everything but the orange juice, place them on a dish, dont worry about wetness on the food, its needed

Dredge the chicken pieces heavily in the flour, meaning to make sure its heavily coated well with the flour
Deep fry in a pot, or deep fryer until golden, it wont take long as the chicken is in chunks
Place the chicken on a paper towel to drain.

The Sauce

Meanwhile, in a deep pot or skillet, put your water and sugar, and tablespoon of orange juice, and bring to a boil.
add the peppers, garlic, orange zest, orange sections, stir, and let cook, for about 4 to 5 minutes
The sauce should be thick, if its not, add a teaspoon, or more, of cornstarch, mixed with a little water, and that will thicken the sauce
Add the chicken
Turn the heat down, and stir, and cook until the chicken is hot.

I advise serving it over some plain white rice. The sauce will add flavor to the rice, and the Orange chicken is strong in flavor, so make your rice bland.

CHINESE ORANGE CHICKEN
INGREDIENTS:

Marinade:

1/3 cup orange juice
2 tablespoons dark soy sauce
1 teaspoon sesame oil
1 teaspoon brown sugar
1/4 teaspoon chile paste
1 clove garlic, minced
1 slice ginger, minced
Oil for stir-frying, as needed
PREPARATION:
Place the cubed chicken in a bowl, and add the marinade ingredients. Marinate the chicken for 30 minutes.
While the chicken is marinating, prepare the sauce ingredients and the garlic and ginger.
Heat the wok and add oil. When oil is ready, add the garlic and ginger and stir-fry until aromatic.
Add the chicken and stir-fry until it changes color. Push up to the sides of the wok, making a well in the middle. Add the sauce.
Combine the sauce and the chicken. Stir-fry for another minute and serve hot.
[NOTE : If you find the orange flavor too overpowering, try substituting a combination of orange juice and water to make 1/3 cup.]

Orange Chicken and Rice:

A little citrus takes this classic combination from familiar to fresh. Our kid testers promised to eat more chicken if it were prepared this way.

1 cup rice
1 cup fat-free, reduced-sodium chicken broth
1 cup orange juice
1/4 teaspoon ground nutmeg
4 cooked chicken-breast halves, in bite-size pieces
11-oz can mandarin orange segments, drained
1/4 cup chopped pecans or walnuts, optional

Prep time: 5 minutes
Cook time: 25 minutes

1. Combine rice, broth, juice, and nutmeg in a pot over medium heat. Bring to boil, cover, reduce heat to simmer, and cook for 15 minutes.

2. Add chicken to rice, cook another 5 to 7 minutes or until rice is tender. Remove from heat, stir in oranges.

3. Sprinkle individual servings with 1 tablespoon nuts for those who like them (be careful-kids under 4 may choke on nuts).

Yield: 4 servings
