I have made one, and it was excellent. It almost melts in your mouth... they are better than roasted ones

I didn't make the turkey, I only prepared it for eating.

A turkey smoked long and slow in a water smoker using a good wood (not mesquite) will be far more tender, tastier, and rewarding than any turkey cooked in an oven. We've done bake-offs, and the smoked turkey always won against the oven baked birds.

But it takes a little more time. Best one I did took 14 hours, it was 22 lbs. Had a 25 lb ham on top, just to keep it's moisture sealed it. Don't let the water deplete, or you'll have a lot of Turkey jerky on your hands.

It's worth a try, and less of a clean-up hassle than frying. (Though that can be really good eating, too.)

I have never tasted a smoked turkey that I liked....they are too dry and besides I don't like the taste of smoked meat. Fried turkey is wonderful..........baked turkey is really good too.....and sooo moist
