I am almost positive about this answer. Boxing as we know it started like hundreds of years ago. It was a sport held by the noble or ruling people. They would have slaves sit cross legged opposing each other inside a circle drawn in the sand and pummel each other until one participant could not continue. The sport kept evolving to what we know it as today. However, the vernacular of ring, from the circle in the sand, remained even up to the squared circle of today. The sport was originally known as Pugilism.

Many things contributed to that. Arenas use to be Round or Oval, most were round,like a ring.
When a fight happens, a crowd assembles to watch, this is Human Nature, and normally a ring of spectators is te result.
In Asia fighters use a Circle inside a Square, the squared ring.
The Boxing Matches of old were oft times very informal events and a crowd would form a ring around the opponents.
The Boxers meet in The Ring, then they fight in a circle.

I think it comes from early days when two men would fight in bars and likes and the crowd would form a ring arounf the fighters.
