Lot's of good ideas so far!
As is live in Westphalia where the Pumpernickel originally comes from, I have a very different local recipe for you. It's a dessert made with Pumpernickel:

Westfälische Stippmilch mit Erdbeeren & Pumpernickel

400g curd
80mlsugarwater (1:1 sugar-water)
1/2 vanilla pod seeds scratched out
60g cream half-whipped
40ml milk
300g strawberries
2cl cognac or brandy
150g Pumpernickel
some honey and/or treacle

Mix the curd with the sugarwater, the vanilla seeds, the cream and the milk.
Wash the strawberries and cut big ones in half and pour the brandy over it. Cut the Pumpernickel in small dices put it in a big bowl and soak it with some honey and treacle.
Put a layer of strawberries over the Pumpernickel and the curd-mass on top.

Hope the translation of this recipe works.

Never tried it so cant help you there. But after reading sum of the the things people eat with it no wonder it got its name.

Pumpernickel 'a coarse, dark, slightly sour bread made of unbolted rye', is from German, as one might expect. The word was originally used in German as an insulting term for anyone considered disagreeable. Its elements are pumpern 'to break wind', and Nickel 'a goblin; devil; rascal', originally a nickname from Nicholas. Pumpernickel, in other words, literally means 'farting bastard'.

here do this with it

INGREDIENTS
8 slices rye or pumpernickle bread
3/4 cup thousand island dressing
1 (16 ounce) can sauerkraut, drained
8 slices Swiss cheese
8 slices pastrami
1/4 cup margarine, softened
DIRECTIONS
Spread each slice of bread with thousand island dressing. Top 4 of the bread slices with sauerkraut, cheese and pastrami. Place remaining bread slices on sandwich. Spread margarine on the outsides of each sandwich.
Heat a large skillet over medium high heat. Grill until browned, then turn and grill until heated through, and cheese is melted.

I like to toast slices of pumpernickel and spread it with butter. You can also spread some Brie on it when it's still hot from the toaster and throw on some fresh tomato slices and black pepper.

Also great with a good Liverwurst and thin slices on onion on it.
And, of course, a nice German or Dutch beer to go with lunch and a few nice dill pickle spears on the side. I can hear the "oom-pah" bands playing now...

Enjoy.

That is a great bread. One of my favorites it to put a slice of Limburger cheese and a slice on onion on a piece of black hard crust pumpernickel bread and wash it down with a nice cold beer.

Pumpernickel goes well with Entamaler and Havarti cheese. If you can find a Spanish cheese called drunk goat cheese...that on pumpernickel is heavenly!!!

I have to agree with Curious Kate and Abie - that smoked salmon is great. But I shy away from anything too creamy that does not have bite. A mild horseradish sauce, spread thinly, then the smoked salmon topped with sliced raspberries that you have removed from a bottle of raspberry vinegar. And between munches the occasional pickled quails eggs (in a spicy latin salsa pickle - similar to that in "Leith's Latin Cookery").

Smear it with full fat cream cheese, to which you have added some chopped garlic.

Top it with thinly sliced smoked salmon or gravad lax.
(or if you don't like this try Chorizo or Salami)

Then garnish with raw onion rings and sliced dill pickles.

Have to hand horseradish sauce or wasabi paste

Serve with coleslaw or potato salad, and enjoy it - it can be grim without the right accompaniments!

It is the BEST for Ruben Sandwiches.
Pile it up with corned beef, then Swiss cheese then sauerkraut, then thousand island dressing. Serve really warm. Oh my goodness. It is an experience you will never forget!
