Do they get bigger or smaller?

they look sunken and tired, but they don't change sizes... that only happens if you're obese :)

considering my face literally shrunk when I was anorexic my eyes looked to big compared to the rest of my face.

they stay the same size, it's just they look bigger because there is less muscle and fat in their face.
