Hi, I'm italian. First thing DON'T mix meat or fish or anything else with pasta! I can tell you an easy way to get a good dish of spaghetti...
you need some tomatos, garlic,olive oil,spaghetti,parsley and salt.
cut in very very little pieces garling and put it into a casserole with two spoon of oil, then let the garlig become quite gold and add the tomatos cut in small cubes and without peel. cook it for 5-7 minuets and extinguish the fire. put into the casserole the parsley, salt and spaghetti boilled, mixed well, put on fire for 3-4 minutes, just to warm it, then serve. And now you have the "Spaghetti alla carrettiera"! very simple but tipicall italian!

You need a good main course, some nice bread and a salad to go with it, and of course some nice wine. Try baked ziti as a main course: Layer in a 10x13 inch glass baking dish 1 layer spaghetti sauce, 1 layer cooked ziti, 1 layer cheese mixture (ricotta cheese mixed with Parmesan cheese, shredded Mozarella, crushed Ritz crackers, Italian seasoning, garlic powder and egg). Repeat layers until all ingredients are gone. Top final layer with spaghetti sauce, mozarella cheese and Parmesan. Bake at 350 degrees for 30/40 minutes. Serve hot with salad and bread. If you like meat you can add it to the spaghetti sauce..meatballs, cooked hamburger, or sausage all work well.

1 1/2 oz Pkg. spaghetti sauce mix
Salt and pepper
2 Tomatoes, chopped

Sprinkle meat with salt and pepper and then dry
spaghetti seasoning mix. Place in crock-pot. Top with
chopped tomatoes. Cover and cook on low for 7 to 9
hours or until meat is tender. Slice and Serve on hot
spaghetti; spoon sauce over all. Makes 6 to 7
servings....

slice pepper and onions, press a few gloves of garlic, sautee in olice oil. cook slowly and allow onions to carmelize. in a seperate pan, simmer italian sausage in a small amout of water. when done, cut up sausage and add to pepper and onions. don't allow the liquids to disappear.

boil water, cook angel hair pasta. when it's done, toss the pepper, onions and italian sausage. sprinkle with capers. mmmmmm

serve with a salad of sliced tomatoes, fresh mozarella, olive oil/vinegar and herb dressing, and garlic bread.

Chicken Breasts Stuffed with Italian Sausage and Breadcrumbs:

Tangy sourdough bread adds intriguing flavor to the herbed sausage mixture. Total time: 35 minutes.

1 (4-ounce) Italian sausage link
1/4 cup finely chopped onion
2 tablespoons finely chopped celery
1/4 cup dry white wine
1 (1 1/2-ounce) slice sourdough bread, toasted and crusts removed
1 garlic clove, halved
1 tablespoon minced fresh parsley
1/2 teaspoon salt, divided
1/4 teaspoon freshly ground black pepper
2 (6-ounce) skinless, boneless chicken breast halves
Cooking spray
1/2 cup fat-free, less-sodium chicken broth

Remove casing from sausage; crumble sausage. Heat a large nonstick skillet over medium-high heat. Add sausage, onion, and celery; sauté 5 minutes or until sausage is browned and onion is golden. Add wine to pan; cook 1 minute or until most of liquid is absorbed.

Rub each side of bread with cut sides of garlic; discard garlic. Coarsely crumble bread; add to sausage mixture. Stir in parsley, 1/4 teaspoon salt, and pepper. Let stand 5 minutes or until liquid is absorbed; toss to combine.

Place each chicken breast half between 2 sheets of plastic wrap; pound to 1/4-inch thickness using a meat mallet or rolling pin. Place half of stuffing on one side of each chicken breast half, leaving a 1-inch border around sides. Fold remaining half of each chicken breast over stuffing, and secure with wooden picks. Sprinkle chicken with remaining 1/4 teaspoon salt.

Heat a large skillet over medium-high heat. Coat the pan with cooking spray. Add stuffed chicken breast halves to pan; cook 3 minutes on each side. Add chicken broth, scraping pan to loosen browned bits. Cover, reduce heat, and simmer for 5 minutes or until chicken is done. Remove the wooden picks; slice breasts in half. Serve immediately.

Yield: 4 servings (serving size: 1/2 chicken breast)
