I want to cook a large kettle of beans over a camp fire.

Really,you are going to have to go to a bit of trouble with this. Someone will have to tend the fire all the time so the temp stays high enough to keep the pot at a high simmer and it will still most likely take awhile.
May I suggest you at least partially cook the beans at home and then bring to the camp to finish? We do this with beef stew and corned beef and cabbage and it's much easier. Good luck.

I have a smoker and cook beans often. They are really a hit!

I start with an institutional size can of baked beans. It's much easier than soaking dry beans and then boiling them for hours. I cook bacon and onion and add them to the beans. Then, I add chili sauce (Heinz or other brand -- looks like cocktail sauce), brown or grainy mustard, brown sugar, a little ground cinnamon, and a couple of drops of liquid smoke (hickory flavor).

I take a couple of cubana peppers -- these are sweet peppers often used in Italian recipes -- and cut them in half, lengthwise and remove the seeds. I put them on top of the beans and cook them.

As I said, I put them in a smoker and cook for several hours. Since everything is already cooked, you can cook them over the campfire for as long as you like -- you can just heat them through or cook for several hours.

What kind of beans? Just buy the canned variety and heat them up over the fire. Easy enough!!

water , beans, onion, ,salt, hot peppers,& smoked ham hocks, about 4, in a large pot besure to have a lid for your pot or they won't get done. put about haft pot of water, & watch them , they will burn on you add water as needed ,.enjoy
