Unless he is trying to make pizza in a home oven, and needs to get the temperature of both oven and pizza stone to 500 degrees or so, then it's just plain silly. Even for popovers and really fussy baked goods, 25-30 minutes is enough.

I agree with you. One whole hour is WAY too long for normal home use. I grew up using a natural gas oven and my mom would wait until the thermostat automaticaly turned the flame off there by meaning the oven had reached the required temperature which took about 15 min or so.

Goodness, an hour! A lot of wasted energy for a regular home oven.
Fifteen minutes should be plenty long....in fact...it should take a lot less actually. You can save a lot of energy by cutting back some. Does your oven have a pre-heat setting to use? That might prevent wasting.

Ditto the 15 min preheat time. I can't think of anything that would necessitate a one-hour preheat. I don't think that his source is very reliable or maybe he wasn't paying that close attention to what the "chef" was saying.

No, an hr is too long and it is a waste of energy. Usually it only takes 5 mins for an oven to heat up to the desired temperature.

It doesnt make sense to preheat a home oven for more time than it takes to reach temperature its not going to get any hotter if you set it to say 350 when it gets there its ready! "right" why would it make any difference how long its been at 350? you are right and your friend is gullible

The aquaintance is wrong. 350 degrees is 350 degrees, there is no difference whether that temperature is attained in 1 second, 1 minute, 15 minutes or is "maintained" for 1 hour...as long as the temp reads 350 degrees when the food goes in it will bake at that temp...it is simple science!

The only situation where I've ever heard of using more than 15 minutes is when you are heating a pizza stone, and then you may want to go half an hour or more to get the stone really hot.

I would just use the 15 minute pre-heat. Your oven needs to get up to the temperature that you want and no oven that I know of takes that long to get to that temperature.
