Do not refreeze thawed meat.
My advise would be to boil it or bake it completely, or microwave it if you have little time. Take the meat off the bone after it has cooled some. Refrigerate until cool. Then I would freeze the cooked and cooled meat just in case you don't end up using it on Monday.
I do this and put packages in the freezer in the amounts I need.

You can't refreeze it, it won't be good. Here's a good casserole you can bake ahead of time and then just reheat it when you want to eat it...
Take 1/2 box of elbow macaroni and pour into the bottom of a casserole dish, dry. Sprinkle with garlic powder, oregano, basil and salt/pepper. Place the uncooked chicken pieces on top of the macaroni. Mix together equal amounts of 1 jar spaghetti sauce and 1 jar water together and pour over the chicken. Sprinkle Mozarella and/or Parmesan cheese on top and bake for 1 hour at 350 degrees. Reheat in microwave by individual piece as needed. Enjoy!

Eve's Chicken Quarters
INGREDIENTS
4 chicken leg quarters
1 (4.5 ounce) package instant long grain and wild rice
2 cups water
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container sour cream
2 cloves garlic, crushed
1 tablespoon minced garlic
1 cup chopped broccoli
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place chicken quarters in a 9x13 inch baking dish and bake in preheated oven, covered, for 45 minutes.
Meanwhile, in a large bowl combine rice and seasoning packages, water, soup, sour cream, crushed garlic, minced garlic and broccoli. Mix well.
Remove chicken to a platter and drain oil. Spread rice mixture in the bottom of the baking dish, then arrange chicken on top of rice. Bake uncovered for 30 to 45 minutes, or until wild rice is opened up and liquid is absorbed.

I will go with seasoning well and then cook it in some onion, bell pepper and chicken stock. Then I will freeze it for later or even take it off the bone and chop it for salad or chicken lasagna rolls, enchiladas or some thing like that. Also I have season well and then freeze again.

After it is thawed out do not refreeze it, I would not use it more than 1 day after you thaw it, even if you refrigerate it, just to be on the safe side.

simmer it in water, soysauce, garlic powder and dry mustard until it falls off the bone. Shred and freeze. Use it in sir fry later.
