Have you ever beat warm milk sweetened with sugar?
It WANTS to froth up!
The point was to get maximum fluff possibe out of all the elements in the omelettes your very thoughtful grandma
made for you! That was a very sweet gesture!

Everyone seems to agree that the milk makes the eggs fluffier. As for the sugar? I've never done it that way, but I can see that that bit of sugar would make for little browned (or, caramelized) spots on the surfaces of the egg. I think grandma liked that subtle touch of candy and that's why she did it that way.

Milk will make the eggs fluffier. I have never heard of sugar in scrambled eggs, I usually put salt in scrambled eggs.
But when I make french toast I put sugar and vanilla and a splash of orange juice instead of milk, and I use thick slices of Kings Hawaiian bread.

I always put a splash of Milk in my eggs, never tried sugar... mile certainly makes the eggs fluffier. Listen to your Grandma, Grandmas are always the best cooks!

i don't know about the sugar, but I had always heard that the milk would make the eggs fluffier; it has been my experience that the milk tends to make the eggs less fluffy; I use 1-2 teaspoons of water instead; seems to work better for me

I don't know about the sugar, but the milk makes the egg smoother, easier to manage in the pan, and yes fluffier.

The milk adds a creaminess, of lightness and fluffiness to the eggs. Without it the eggs will tend to be a bit tougher, more "omelette-y". Many souithern cooks will add a pinch of sugar to many dishes--in that amount it acts as a falvor enhancer, bringing out the natural flavors of the egg, in this case.

I've always added milk to my scrambled eggs too they say it makes them fluffier but I've never added sugar.

MILK ANS SUGAR MAKE THEM fluffier. everyone knows milk does. sugar is also, just look at a lemon pie, the top is made from beaten egg whites and sugar. granny knows best
