Butter gives flavor, in the case of brownies, you can use either, and you won't notice as much, because it is not the primary flavor. But say you are making candy, like fudge. Then you use butter. And never ever use anything that is labeled spreadable. The oil and water content just isn't right for baking. Say you are making chocolate chip cookies, use butter because of the flavor, but if you make chocolate cookies, it would be fine to use margarine because chocolate is the primary flavor. It is all about flavor, and of course for the more conservative cook, about cost.

I wish people on this site would stop spreading the big fat lie that margarine is healthy. MARGARINE is not healthy, if you leave it in the sun for a year it will still be exactly the same. Real foods decompose. Margarine contains trans fatty acids, DEFINITELY NOT HEALTHY!!!!!! Butter is a traditional food that has been eaten by humans since they started collecting milk from animals they had domesticated. It is a real food and yes everything tastes better with butter. As long as you are not eating sticks of butter like popsicles it is more healthy to use than margarine.

Everything is betta with buttah! I agree, especially in baking. Better really provides a rich flavor that can rarely be replaced. Sometimes butter isn't appropriate, especially in recipes that require a lot. In that case, the butter will make it really greasy and tooooo rich.
In your case, the brownies will be great with regular butter. I recommend Land of Lakes Unsalted. Use unsalted because that way you can control the salt, and most recipes call for salt.

I prefer butter especially since margarine is 1 molecule away from being plastic. Butter tastes better anyway. I like Tillamook brand or Land O lakes. Usually unsalted. Good luck

Butter won't break down like margarine. Margarine gets watery, and baked goods tend to be "flat".
If you want it to bake right the first time, use butter. Any butter will work the same- make sure you choose by salted or unsalted.

Typically, butter will make your baked goods brown more and if, for example, you are making cookies, they will be flatter and crispier with butter. Margarine will keep it from spreading so much. But for brownies it doesn't really nake a difference. I cook with margarine a lot b/c it is cheaper, but I think a lot of people prefer the taste of butter.

Butter is always better. Good quality. Brand doesn't really matter but I like Land O Lakes because the package is easy for my husband (who does the shopping) to recognize.
