It is Chicken. not just white meat but processed chicken, meaning it is probably the scraps and left overs from the good stuff and processed to make the mc chicken same as the chicken nuggets in many places.

It's chicken rib meat. The rib meat only makes small tidbits of chicken, so it's good to squish a lot of it together for things like chicken nuggets and chicken patties.
