In short layman's terms.... the meat is well chilled, ground in a meat grinder, chilled again, put into a cold food processor, blitzed and then cream, seasoning, and egg whites are added. The whole mixture is blended until the protein molecules are suspended in the fat molecules. Keeping the equipment cold aides in the emulsification and prevents it from "breaking". The meat is actually mashed to a paste instead of ground as in most sausages. Inside the casing, hot dogs are much the same. This is because they are both made of scrap meat that is already mostly mashed.

It's not actual sausage, love. Read the ingredients on the back. It's similar to what hot dogs are made of... or it's the same concept, anyway.
