The number of channels is basically the nuber of leads that comes off the amp. When I say leads I mean a pair,+/- sort of like how a battery or a magnet is a pair, speakers function the same way. A four channel amp for example would have 4pairs of leads coming off of it, and be able to divert power seperately to each of those pairs of leads depending on how the stereo was hooked to the deck in the car. Generally amps are hooked up 1 speaker per channel for a 4 channel amp, which are best for the system, and when I say system I mean the speakers that are in the factory positions. Most cars have 4 of them. For subs, it is almost always reccomended to run a 2 or monblock amp, which only have one or two channels or leads. By bridging an amp or combining channels you can get more power out of it. This is great for 2 channel amps, or mono amps....but 4 channel amps seem to have problems with it at times. Even if multiple subs are run you will almost always see an amp for every pair of speakers...this is why. Pros will usually run an amp with every pair of subs that operate in order to reduce the strain on the amps.

Amps provide watts to increase sound quality. The power is divided into channels. You have Mono amps which is one channel, ideal for subs. Four Channels most people use for providing power to front and rear speakers. A channel is how many outlets for the amp to be able to provide power too. a channel is a output from the amp to the speakers or subs. if you have a 2 channel amp there is 2 outputs on the amp if you have a 4 channel amp there are 4 outputs this goes for all the amps whither it is a 1 channel,2channel 4channel or 5 channel.

the number of channels tell u how many channels the amp pushes sound through
a two channel amp pushes through two channel so it can power two speakers or u can bridge them to get more power through a single channel for pushing a sub a four channel can push four speakers or u can bridge them and get two channels with more power for running several subs

Basically, one channel (mono) is one amp. A two channel amp can be considered to have two amps in one. A four channel amp is four amps in one.
This is why the more channels, the more expensive.

it means how many differant areas sound can go for ictence: a four channel amp can have front left front right rear left rear right. but a 2 channel amp can only have right and left.

does it then mean if you have 1 channel/monoblock,it is only a subwoofer than can be connected on the output and not a normal car speaker or tweeter?
