I assume by "the car sees the man" you are referring to the driver. The car is inannimate and can't literally see, hear or feel. Same for "how did the car know......" I am assuming car = driver.
The driver saw the man and stopped the car. You did not ask how he saw the man. That is a given. You only asked how did he know the man was there He knew the man was there because he saw him.
