Serve melba toast with soup or salad, or with dips at a party.
INGREDIENTS:
1 long thin loaf of French bread
butter, softened
fresh grated Parmesan cheese
PREPARATION:
Slice loaf into 1/4-inch slices. Spread slices with butter then sprinkle with Parmesan cheese. Place on a cake rack or other rack over a baking sheet, so drips will be caught and air will move around the slices.
Bake at 325° for about 20 minutes, or until dry and very crispy. Optional: Crabmeat; chives, petite diced tomatoes and olive oil

BACON MELBA TOASTS
1 lb. bacon, fried crisp
1 c. mayonnaise
1 c. cheddar cheese, grated
1 sm. onion, diced
1 tbsp. sherry
Dash or two of Tabasco
1 box melba toasts
Mix well. Chill. Spread on melba toast and broil about 3 minutes.

My recipe's in the storage unit, for the time being. But I think basically, you just need pieces of someone named melba, pour it on toast and bake it, until it's crisp. Hey, I'm joking. But my recipe really is in storage, for now.
