When you see the beginning of mold (dusty gray or green powder), your bread is definitely too old and should be trashed (or dumped in the compost heap if you have one).
Stale bread can be cut up (in very small squares) and sauteed in a little olive oil with garlic and seasonings to make delicious croutons for salads or soups.

expiration date...maybe...just a thought...if it's real bread from a bakery I'd give it two days.....used to work in a resaurant that made fresh bread with no chemicals and it would mold after 3 days...without fail....AND SAMANTHA IF YOU'RE BUYING BREAD THAT'S GOT AN EXPIR. MORE THAN THREE WEEKS AWAY YOU'D BE BETTER OFF DRINKING A BARREL OF PRESERVATIVES...IF YOU KNOW WHAT I MEAN.......

Molding is one way, if its hard that's another way or there should be a date on the paper it comes in.

Bread is good until it gets moldy. Just being old doesn't make it bad.
If it looks green or fuzzy, or if it smells funny, skip it.
Otherwise, it's just fine to eat.
And, in truth, you can eat it when it's moldy...It won't really hurt you, it just won't taste good.
