You probably don't have a pastry wheel. So just roll out your dough and use a pizza cutter to cut the noodles into strips. Knives will pull the dough. To keep the lines straight, use a clean ruler or straight edge to guide the pizza cutter.

Actually yes. Take some tortilla mix that only needs water and roll out the dough flat. Take a sharp knife and slice the dough into thin strips.
Boil them in some salted water(not too much salt) ,and there you go.
