Chocolate and Peanut Butter Cookies:

1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/4 cup butter, softened
2 tablespoons creamy peanut butter
1 1/2 teaspoons vanilla extract
1 large egg white
3/4 cup regular oats
1/2 cup raisins
1/2 cup semisweet chocolate chips
Cooking spray

Preheat oven to 350°.

Lightly spoon all-purpose flour into a dry measuring cup, and level with a knife. Combine flour and 1/2 teaspoon baking powder in a small bowl, stirring well with a whisk. Place the granulated sugar, brown sugar, butter, peanut butter, vanilla extract, and egg white in a large bowl; beat with a mixer at medium speed until well blended (about 2 minutes). Add flour mixture, 3/4 cup oats, 1/2 cup raisins, and 1/2 cup chocolate chips, stirring until ingredients are well combined. Cover and freeze cookie dough for 10 minutes.

Divide cookie dough into 30 equal portions, shaping each one into a ball. Place the dough balls 2 inches apart on baking sheets coated with cooking spray, and flatten dough balls with the bottom of a glass. Bake the dough balls at 350° for 15 minutes. Remove the cookies from pans, and cool completely on wire racks.

Yield: 30 cookies (serving size: 1 cookie)

CHOCOLATE CHIP COOKIE DOUGH CHEESECAKE

CRUST:

1 cup graham cracker crumbs
3 tablespoons sugar
1/4 cup butter, melted

CHEESECAKE:

24 ounces cream cheese, softened
3/4 cup sugar
1 teaspoon vanilla extract
3 eggs
1 cup chocolate chip cookie dough, * see note

Combine crumbs, sugar, and butter; press onto bottom of 9-inch springform pan. Bake at 350 F, 10 minutes.

Combine cream cheese, sugar and vanilla, mixing at medium speed on electric mixer until well blended. Add eggs, one at a time, mixing well after each addition.

Drop 2/3 cup of the cookie dough by level teaspoonfuls into cheesecake batter; fold gently. Pour into crust. Dot with level teaspoonfuls of remaining 1/3 cup cookie dough. Bake at 450 F. for 10 minutes.

Reduce oven temperature to 250 F; continue baking for 30-40 minutes.

Loosen cake from rim of pan. Chill.

Serving Size: 12

easiest one I ever learned,
1 cup of peanut butter
1 cup of flour
1 cup of sugar
mix together and drop about a golf ball sized blob on a cookie sheet and flatten with a fork and then bake @350 for about 6 to 10 minutes (depending on how fussy your oven is)
watch the first batch and remove when golden brown, let cool 10 minutes or so then place an a plate by a glass of milk and watch them vanish!

My mom made these awesome chocolate chip cookies, and she made them with the basic cookie recipe on the back of the nestle chocolate chip bag, but she replaced some of the flour with oatmeal flakes she ground up in the food processor. They were thick and chewy and she always got complements on them.

Only to be eaten alone or with a friend who's eating the same thing: a sandwich made by first thinly coating one slice of bread with Marmite or Vegemite (butter-type spread first is optional); then spread it with crunchy peanut butter; then add a layer of thinly sliced raw onion. You will either love it or hate it. I love it.
