Caprese Pasta Salad:
Serving Size : 4
Best if you can let the ingredients marinate for at least an hour before you serve the dish.
1 1/2 lbs fresh, ripe tomatoes, coarsely chopped
8 oz fresh mozzarella cheese cut into 1/2 inch cubes
4 T extra virgin olive oil, the best you can get
1 t red wine vinegar
1/2 cup fresh basil leaves, washed, dried and shredded
salt and freshly ground black pepper
1 lb pasta, preferably penne (spaghetti will do)
1 - 2 cloves garlic (optional), chopped fine
a bit of hot pepperpeperoncino(optional)
An hour or so before your meal, using a wooden spoon, mix the mozzarella, tomatoes, oil and vinegar (optional garlic and/or hot pepper)in a deep bowl. Season to taste with salt and freshly ground black pepper. Cover with a clean dishcloth and let it sit at room temperature for an hour or so. Add the basil and toss well. Cook the pasta, remove when al dente, with a bite to it. Drain the pasta and return to the warm pasta pot. Pour on the tomato mixture and toss. Check again for seasoning. Place in serving bowl and serve.

10-minute Calzones
Serving Size : 4
1 pound bag frozen pizza dough, thawed
6-ounce package pepperoni, chopped
1 cup ricotta
1 cup shredded mozzarella
2 tablespoons olive oil
16-ounce jar pasta sauce, such as marinara
Grated Parmesan
Prep time: 10 minutes Total time: 45 minutes
Heat oven to 400° F. Cut the dough into quarters and shape into 4 balls. Set aside.
In a medium bowl, mix the pepperoni, ricotta, and mozzarella. Roll or pull each ball into a 7-inch circle.Spoon 1/4 of the pepperoni filling onto the center of each. Fold over and pinch the edges together. Place on a baking sheet and brush with the oil. Bake for 30 minutes, or until golden.
Meanwhile, heat the sauce, then spoon it over the calzones. Top with the Parmesan.

Baked Ravioli And Meatballs
Serving Size : 6
16 ounces frozen cheese ravioli; cooked, drained
20 frozen cooked 1" meatballs; thawed
26 ounces pasta sauce
1 cup shredded mozzarella cheese
1 tablespoon dry Italian seasoning
Heat oven to 375F. Grease or spray 9X13 baking dish. Place cooked ravioli in dish; top with meatballs. Pour on pasta sauce. Add seasonings and cheese. Bake 30 minutes until heated through and cheese is melted.

Serving Size : 4
1 package Ham, diced (12 ounces)
1 package refrigerated tortellini pasta (8 ounces)
1 package fresh mushrooms, sliced (8 ounces)
1 cup frozen green peas, thawed
8 ounces Alfredo pasta sauce
Parmesan cheese
Cook tortellini according to package directions. Drain and set aside.
Heat a lightly-oiled skillet over medium heat and add mushrooms. Cook five minutes then add peas and ham. Cook 3 more minutes. Add Alfredo sauce and blend. Add tortellini and stir. Simmer 3 minutes. Sprinkle with Parmesan cheese and serve.

Bring dessert. Go to the bakery, or the grocery, and buy whatever you think they will like. Cookies, regular or bar, or brownies are especially popular, they are not messy, and do not have to be cut and served like a cake or a pie. Cupcakes would be good, too. If you want a side dish, go to the deli section of the grocery, they have salads, meats, prepared trays, anything you could want. Shortcut on a veggie and dip tray, order from the deli, or go buy the veggies that are already cut for you, all you have to do is wash them, arrange them on a plate, and plunk the tin of dip in the center, or be nice and put it in a bowl after you get to the potluck.

This is my favorite potluck recipe. It's fairly easy to transport and it tastes better at room temperature than right out of the refrigerator. (Of course you'll need to keep it chilled until about 30-60 minutes before serving). It's great for an Italian theme, it's the color of the Italian flag.
Tortellini Salad
1 (7-oz) pkg. dried cheese-filled tortellini (or 14 ozs. of fresh)
1/2 cup freshly grated Asiago or Romano cheese (1 1/2 oz)
1 to 1 1/2 cups halved cherry or grape tomatoes
2 oz fresh edible pea pods, cut into 1-inch pieces, blanched (about 1 cup)
Salt and freshly ground pepper
Mustard-Basil Vinaigrette
1/2 cup olive oil
3 tablespoons white-wine vinegar
2 1/2 tablespoons Dijon-style mustard
3 tablespoons finely chopped fresh basil (or 1 teaspoon dry)
2 tablespoons finely chopped shallots
1 large clove garlic clove, minced
1/2 tsp sugar
Cook tortellini according to package directions. Drain, rinse with cold water and drain again. Cool to room temperature or cover and refrigerate cooked tortellini until chilled.
Prepare Mustard Vinaigrette by whisking together ingredients or by placing all ingredients in a jar and shaking well.
In a large bowl, combine cooled, cooked tortellini, cheese, tomatoes and pea pods. Add vinaigrette; gently toss to coat evenly. Season with salt and pepper to taste. Cover and chill till ready to serve, or cover and let stand at room temperature at least 30 minutes before serving.
Makes 8-10 servings

You could take garlic bread and put it in the oven once you get there, shop bought would be easiest, but you can make it from scratch:
Baguette or other loaf
Butter
Garlic cloves
Cheese (cheddar or mozarella)
Mince desired number of garlic cloves (2 per half loaf of baguette) and mix with half cup melted butter, then spread on loaf, add grated cheese if desired and bake at 375'F for about 5 mins or until golden and cheese has melted.

SUPER EASY.... Homemade Queso and tortilla chips
QUESO:
1 pound ground beef browned
1 regular sized package of velveeta
1 jar medium Pace Picante
Put the three things in a crock pot and leave on warm all day....easy finger food but fulfilling too!!

You could make skewers of small mozzarella balls, cherry tomatoes, and basil leaves. I saw Rachel Ray do that and it was quite pretty and very easy. Marinate the mozzarella balls in an Italian salad dressing or marinade overnight before assembling the skewers if you want.

Go to Costco or your local Market. Grab some frozen Raviolis. It takes about 10 minutes to cook and 10 minutes to prepare.. If you go to Costco get the Spinach ones.. they are really yummy..

Take meatballs in a tomato sauce, perhaps in a slow cooker or something (crock pot?). You don't even have to make the meatballs if you don't like cooking, just buy some frozen or see if you can get them at a deli.

Take a tuna noodle cassarole. But get one made out of plastic. Nobody eats that crapola, and you'll be able to use it again and again. Noone will notice.
