Here's a recipe for an Ice Cream Machine...

Pistachio Ice Cream
2/3 Cup unsalted, shelled pistachios
1 Egg
1 Cup milk
3/4 Cup sugar
2 Cups whipping cream
1 Tsp vanilla extract
1/4 Tsp almond extract
In blender or processor, combine nuts, egg and milk. Blend until nuts are finely chopped. Mix in remaining ingredients. Freeze according to manufacturer's instructions. Makes 1 quart

Well basically it involves the same proses as plain vanilla but u add either one or both of the fallowing. 1) Add pistachio extract which is nice because it has max flavor and doesn't have any bits and pieces of the nut that may be bitter and what not.. 2) add ground pistachio butter, but one must pick through the nut butter before making to get out all the bitter nasty pieces.. Personally when we would make it in the restaurant we would use both. The extract to ensure the proper flavor and some quality nuts/butter for texture and what not.. It's a fairly simple process that's best left to trial and error so as to get the flavor that you enjoy.. Also can add candied nut to final product! That makes it real nice!

Might want to try making some other off the wall flavors that are really good! Like Avocado flavored! And Corn flavored! Believe it or not they are wonderful in ice cream! Good luck friend!

I would imagine that you would have to steap the pistachios in the milk that you are going to use to get the flavor out of them, then strain those out and add more pistachios later, if you want to have whole ones in there. But I'm not sure if that would work. It would be really hard to get a good amount of flavor out of the nuts.
