Just shy of forgetting about it and burning it to a crisp or not turning the oven on so that it's raw, even the worst cook on their least likely day would have a hard time fouling up this recipe:
Take a square of heavy duty aluminum foil and place a boneless chicken breast in the center. Season the chicken with whatever you fancy that night: some options include barbecue sauce, teriyaki sauce, or lemon pepper.
Place a quartered, peeled potato, a few brocolli spears, a peeled and sliced carrot, and some slivers of onion (if you like it) around the chicken. Dot the veggies with a little butter or margarine, then lightly salt and pepper them.`
Fold the aluminum foil up to form a packet, then bake at 350 degrees until the chicken and veggies are done. (Usually around 25 to 30 minutes.) Serve with a deli salad of your choice and some breadsticks. This meal is fast, easy, delicious, and darned near goof-proof!
And BTW -- I bet you're a lot better cook than you think you are or at least will be by the time you get done trying everyone's suggestions. The recipes that people have given you ALL sound great. . .you can do it!! :-)

Crockpot Meatballs
Layer in crockpot:
Mama Lucia's frozen meatballs (1 box)
1 large zucchini - wash it, cut off both ends, then slice into thick slabs
4oz fresh mushrooms - just wipe 'em off with wet paper towel
1 26oz jar or can of spaghetti sauce
Repeat those layers until your crockpot is as full as you want for the number of people you're feeding (assume that each batch above will feed 3 hungry people or 2 adults and 2 kids)
Rinse all jars/cans with Italian red wine - my favorite for this is Citra Montepulciano D'Abruzzo or Straccali Chianti. Pour wine over meatballs, using about 2oz per jar of sauce. Cover and cook on low for 8 to 10 hours, stirring no more than once.
Serve with hot cooked pasta, good Italian bread, pass the shredded parmesan and more wine. I serve this to my family, take it for covered dish events and potlucks, make it for holidays and it won a first prize of $100 in a local recipe contest. It takes 10 minutes to put together :)

I have a quick and easy recipe for peanut butter cookies and they are great. 1 cup crunchy peanut butter, 1 cup sugar, 1 egg. Mix together and make into balls about the size of a walnut. Press onto sprayed cookie sheet with a fork and sprinkle with a little more sugar. Bake at 350 degrees for about 8 to 10 minutes. Yummy! Kids love them.

You don't have to "suck" at cooking. All you need is something to build your confidence - like something easy to make that will seem like you really had to know your stuff to pull it off. Try this - get some boneless chicken breasts (either one or one-half per person, depending on whether or not they are big eaters) Spray some oil (or, if you don't have spray oil just rub some with a paper towel) in a oven-proof dish -like a casserole dish. This is to make clean-up easier. Put the pieces of chicken in the dish. pour cream of something soup (whatever you like - cream of mushroom, cream of celery, cream of chicken) on top of the chicken. you will need either one or two or three cans, depending on how much chicken you use. Just use enough to cover the chicken well. Put it in a 350 degree oven for about 40 minutes. Serve it from the dish. It would be nice with noodles or rice.
Everybody will think you did something real special, This will make you more confident and you can try something else next time.

Southwestern Skillet Bake
Sensational Southwest flavors and one pan make tonight's dinner easy on the cook!
Prep Time:15 min
Start to Finish:35 min
Makes:6 servings
Southwestern Skillet Bake
1 pound lean (at least 80%) ground beef
1 jar (16 ounces) Old El Paso® Thick 'n Chunky salsa
1 can (11 ounces) Green Giant® whole kernel corn, drained
1 1/2 cups shredded Cheddar cheese (6 ounces)
1 cup Original Bisquick® mix
3 eggs
1. Heat oven to 400ºF. Cook beef in 10-inch ovenproof skillet over medium-high heat 5 to 8 minutes, stirring occasionally, until brown; drain. Stir in salsa and corn; heat over medium-high heat until hot.
2. Reserve 2 tablespoons of the cheese. Stir Bisquick mix, eggs and remaining cheese in medium bowl until blended. Spoon batter around edge of beef mixture, leaving center uncovered. Sprinkle with reserved cheese.
3. Bake uncovered about 20 minutes or until golden brown and toothpick inserted in topping comes out clean.
Substitution
Use Green Giant® Mexicorn® whole kernel corn with red and green peppers instead of plain corn to add even more of a Southwest twist to this skillet bake.
Don’t have Cheddar cheese? Use the same amount of another cheese you have on hand.

Penne w/Vodka Sauce
1 quart store-bought marinara sauce, blended until smooth
1 cup vodka
1/2 cup heavy cream, at room temperature
1/2 cup grated Parmesan
1 pound penne
Simmer the tomato sauce and vodka in a heavy large skillet over low heat until the mixture reduces by 1/4, stirring often, about 20 minutes. Stir the cream into the tomato and vodka sauce. Simmer over low heat until the sauce is heated through. Stir in the Parmesan cheese until melted and well blended.
Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, stirring occasionally, about 8 minutes. Drain the pasta and transfer it to the pan with the sauce, and toss to coat.
This looks harder then it is. But for very little effort you get a great pasta dish. Trust me, this impresses big time.

Brown 1 1/2 lb. ground chuck (hamburger) coarsely, drain. Throw in a bell pepper/onion cut any way you want. Add a large can of whole tomatoes, you cut up, and add the juice. Add 2 cans kidney beans, can of water, TBS. chili powder, and 3/4 cup macaroni pasta. Heat to boil then turn down and simmer until macaroni is tender. Stir bottom so macaroni don't stick. You can add a little water if it is too thick. Also add 2 dashes of Worcestershire sauce, salt pepper. I call this Goulash (my version)
EASY! Gravy Meat!
Use any cut of round steak or shoulder steak, etc (1 or 1 1/2 lbs.). Sprinkle Garlic Salt/pepper on meat; coat in flour (you can shake in bag). Brown in 2 or 3 TBS oil on each side. Drain oil, put meat back in pan. Stir 2 or so TBS dried minced onion into a can of mushroom soup (use a small bowl). Pour over meat. Simmer 30 minutes, loosen bottom of pan with back of spatula and stir a little to mix gravy as it cooks. Serve with mash potatoes, green beans or your choice of frozen/fresh vegetable. You can have rice instead of potato. Goes with anything. Very very easy. You can add fresh sliced mushrooms if you want but, I don't. I like it plain.
Use stewed tomatoes, fresh sliced bell pepper/ onion some other time instead of "soup mixture" and you've got Swiss Steak . That makes the nicest rich gravy by itself. Oh so good with mashed potatoes and that gravy over it, mmmmmmm.
These are a couple to get you going. Have fun and remember...perfect measurements aren't necessary during home cookin' like this. Just a little of this and alot of that.

HO HO Cake
1 box devil's food cake mix
3/4 c sugar
1 stick margarine, softened
2/3 c shortening
2/3 c evaporated milk
2 tsp vanilla
pinch of salt
1 can dark chocolate frosting
Prepare cake mix as usual. Pour batter into greased jelly roll pan.
Bake 12 to 15 minutes at 350.
Combine sugar, margarine, shortening, milk, vanilla and salt. Beat
until light and fluffy about 10 to 15 minutes. Spread over cooled cake.
Melt frosting in microwave for 20 seconds to soften. spread frosting over
white cream layer

Get a jar of roasted garlic alfredo and a package of sliced mushrooms. While pasta is boiling, saute the mushrooms in butter with garlic. Add sauce and heat up. Drain pasta and toss with the sauce. Sprinkle with Parm if you have it.
It's an easy weeknight dinner. Love it!
