I know a recipe to put bananas in a jar. Like some sort of jam or marmalade. I tried once. I also have one for pineapple mixed with cantaloupe. The name of the book is "The art of preserving" this is the recipe: BANANA JAM. 4 pounds bananas, 3/4 cup pineapple juice, 1/2 cup lemon juice, 4 cups white granulated sugar, 2 oz. citrus pectin and 1/2 cup raisins ( optional ).

Peel the bananas and roughly mash half of them and slice the other half. Place them in a large wide saucepan and add the juices. Stir in the pectin and the sugar and the raisins, if youre using them. Mix well and place the pan over high heat. Bring this mixture to a boil, stirring continuosly and cook like this for 5 min. ladle the jam into warmed, sterilized jars and cool. Cover and seal.Leave the jam there for 2 weeks before using it.

This is a good way to preserve bananas that might go bad before you can eat them all.

List of Ingredients

4 lemons grate rinds into the juice of the four lemons

2 cups of sugar

2 cups of water

1 doz. bananas peeled and sliced

Instructions

Grate rind of four lemons into their juice and let soak over night. Boil 2 cups of sugar and 2 cups of water until syrupy, add lemon juice that has been strained. Add bananas and cook until semi transparent. Pour into prepared cans and seal

Final Comments

Very pretty in the 1/2 pint jars and tasty

It may be possible to keep the bananas from spoiling but they are so soft it really wouldn't be feasible to maintain their consistency.

I think it's only possible to can bananas when they are moist. Not dry. You know what, I really don't know.

hi there. im from the south. and there is unfortuneatly there is no way to can bananas. it is a water fruit. and it will be nothing a watered mush if you freeze it. and that will cause it to loose its flavor. sorry hun. but thats the way of the ole water fruit. i would love myself to see an invention so we can freeze water fruit.

I can't say how the flavor would be but you can can anything. The process is only designed to place food in an airtight sterile environment and you can do it with anything.
