what can i put in black beans and yellow rice to give it that authenic cuban/hispanic flavor. like what spices?

well im hispanic and i use cumin, garlic powder and onion powder. or sometimes i add chicken bouillin to my rice.

2 lbs. black beans
2 lg. bell peppers
1 c. olive oil
1/2 c. sugar
2 lg. onions
8 oz. diced pimentos
1 c. vegetable oil
1 1/2 c. sherry
1 1/4 to 1 1/2 c. vinegar (to taste)
2 c. rice
Salt & pepper to taste

Soak black beans overnight. Cover in pressure cooker with water 2 inches over top of black beans. Cook in pressure cooker for 45 minutes. Do not drain any remaining fluid. Dice onions. Cut bell peppers into 1/2 inch by 3/4 inch slices. Add all ingredients to black beans. Simmer for 2 to 4 hours. Beans should make their own broth.
Add liquid when necessary to prevent drying out or burning, but keep broth thick. Serve over rice. Use as side dish to chicken or steak, or main dish on its own. Also, try in flour tortillas to make unique Cuban burittos.

Ingredients:
3 tablespoons cooking oil
1 medium onion; chopped
2 medium sweet green/red peppers; seeded and diced *
2 cloves garlic; minced
2 teaspoons ground cumin
1 teaspoon crushed oregano
3 cups cooked black beans; drained
1 tablespoon lemon juice
1 tablespoon frozen orange juice concentrate
2 medium tomatoes; chopped
salt and pepper to taste
2 tablespoons dark rum
3 cups cooked brown rice


Directions:

In a large heavy saucepan, heat the oil over moderate heat. Add onion and saute, stirring occasionally, about 3 minutes. Add peppers and garlic and cook 3 minutes longer. Add cumin and oregano and cook briefly, stirring. Add beans, lemon juice, frozen oj, tomatoes, and salt and pepper to taste and simmer, covered, for 5 minutes, adding a bit of stock, water, or tomato juice if needed to thin the mixture to desired consistency. Mix 1 cup of the bean mixture with rum and mash to a paste with the back of a fork. Add the puree to the pot, set over low heat, cover and simmer about 20 minutes. Serve over hot, cooked rice with sliced bananas on the side.

* I usually substitute a 4-oz can of chopped mild green chilies.

meaty ham hock
6 black pepper corns
3 cloves garlic, halved
2 bay leaves
1 dried red chili pepper, cut in half
1 chopped onion
1 chopped carrot
1 chopped green pepper
1 chopped stalk celery
1 1/2 tsp ground cumin (comino)
1 1/2 tsp ground coriander
tsp salt
1/2 tsp ground pepper
1/2 tsp hot sauce
You can place your peppercorns,garlic, bay leaves, and chili pepper in a 8 inch square of cheese cloth tied with string. Then remove before serving. You don't have to add the veggies if you don't want.

For heat, choose cilantro, paprika, chili powder, tabasco.... and cooked, shredded pork or shredded beef. Go easy on the spices and taste as you go.

Why don't you just add some Rotel? It will give it the spice, as well as add diced tomatoes, onions and peppers - it would be very good!

buy a smoked ham and cut little pieces like 1/4 inch style to add to it
