COOL MINT DIP
1 lg. container Cool Whip
1 sm. bag peppermint candies (Brach's)
2 boxes peppermint Farm Pirouttes Cookies (chocolate lace)
Crush peppermint candies into small pieces, either by hammering them under a cloth or food processing them. Mix with Cool Whip and refrigerate (1 hour), Cool Whip will thicken. When you are ready to serve place Cool Whip dip into a decorative bowl and place cookies around the dip. Dip the cookies into the mint dip and enjoy!
YOGURT MINT DIP
1/2 c. plain lowfat yogurt
2 tbsp. chopped fresh mint
1 tbsp. honey
1 tsp. grated orange rind
Fresh mint sprigs, optional
Combine all ingredients in a small bowl; mix well. Cover and chill at least 30 minutes. Garnish with mint sprigs, if desired. Serve with fresh fruit. Yield: 1/2 cup

If it's to go with savoury dishes, just mix some mint sauce from a jar in with some natural yoghurt and it's really nice with chopped coriander in too. never mind some of those other answers-it takes half the night just to read them! BTW mayonnaise is too thick :)

Melon with Minted Lime Dip

Yields: 8 servings
"For a refreshing summer side dish for any meal, our Test Kitchen recommends these marinated melon balls with a cool, creamy dip. You can also serve this fruity treat as a light dessert."
INGREDIENTS:
1/4 cup sugar
1/4 cup water
6 tablespoons lime juice
2 tablespoons minced fresh
mint
2 teaspoons grated lime peel
1 1/2 teaspoons ground ginger 8 cups melon balls or cubes
MINTED LIME DIP
1 cup sour cream
2 tablespoons sugar
1 tablespoon lime juice
2 teaspoons grated lime peel
DIRECTIONS:
1. In a bowl, combine the sugar, water, lime juice, mint, lime peel and ginger. Add melon balls. Cover and refrigerate for 1-6 hours. Thread melon onto wooden skewers or toothpicks. In a bowl, combine dip ingredients. Serve with melon.

simple dip like the ones you get in Indian restaurants..
Cucumber, finely diced
2 tsp dried mint
150ml Natural Low Fat Yoghurt
Method...
Mix the cucumber and mint together, set to one side for 10 minutes or so.
Stir in the yoghurt just before serving
