Yes, you can freeze it rolled or in a block. You can cook it from frozen or defrost, roll and cook.

What restaurants and shops do is very difficult to imitate successfully.
Freezing pastry is fine, but pastry that has been formed into pies etc does not always work well.
If you freeze a pie without it being cooked it will almost certainly sag and lose its shape when you take it out. Sometimes the pie will go soggy.
If you freeze it after it's cooked it will dry out a little. Both ways will be ok though.

Yes. Here is a tip. Puncture the bottom of the pie crust with a fork and bake it for 5 minutes. Let it cool. Fill it and freeze it. You should have excellent results.
If it is just the crust, freeze without doing any baking.

Don't know for sure, but I don't see why not ! When you by frozen pies, it usually says on the box to brush them with egg or milk, and as far as I know you only do that to raw pastry !
