As long as he is in the country legally and this is documented (any legitimate employee will insure all the legal paperwork is in order) he's free to do as he wishes. I know this for a fact because my wife is in the process of becoming a citizen. She is working right now and has her green card.

If you have a green card, then you should be able to change jobs, with no problem. A green card gives you the right to live here in the US and work, it doesn't say for which company though.
If you are still in doubt though, call an immigration lawyer and ask.
