marking territory. they're scratching up soil, making marks (kind of like land marks) and it also spreds their scent around more. not all dogs do it. my old dog used to, and if our other dog saw her do it, she might try to, but she doesnt anymore since the old dog died a few years ago. our new pup has done it once or twice that i saw, but only like 1 paw worth, not even really trying it seemed. i think it just depends on how dominant your dog is.

i used to think it was just her trying to be nice and cover up her poo

The first 2 answers were incorrect. The reason for this is visual. The kicked up grass and soil is a sign to other dogs to keep away from its territory. Many animals do this -- dogs are one.

Maybe of the same reasons some dogs eat their poo; to cover up the smell.

Dogs have scent glands in their feet..This is another way of marking their territory. Some male dogs mark with urine and do this..My female does this every time she goes..It's to tell other animals that this is her space. It really depends on the personality of your dog, whether she/he is dominant or not.
