Russian salad


Basic ingredients

1 large potato
2 eggs
1 small tin of tuna
mayonnaise
green olives (without stones)


Steps:

1. Peel the potato cut into small pieces and boil in salted water for approx 10 mins or until soft - drain and leave to cool

2. Hard boil the eggs then remove the shells and leave in cold water to cool

3. Once cooled, chop the egg and potato into small cubes place in a bowl and add the tuna

4. Chop a few green olives and add to the bowl (optional)

5. Mix all the above ingredients season with a little salt and pepper

6. Finally add 2 - 3 tbsp mayonnaise and stir into the mixture

7. Garnish with whole green olives and a sprinkle of sweet paprika.



Tips and ideas:

Cut a french loaf into small pieces and cover each piece with the salad and place on a plate for serving - this is very popular in the basque country
Experiment with additional ingredients such as cooked peas or carrots. Try adding a little finely chopped onion or red pepper
You can also add pickled onions or gherkins, finely chopped and dried.

3 large potatoes, boiled al dente
2 carrots, cooked al dente
1 cup peas, cooked
1 cup corn, cooked
2 large beets, cooked al dente
1/4 cup small capers
8 gherkins, cut into small dice
1 1/2 cups mayonnaise, plus some extra to 'ice' the salad

Cut all the vegetables into small dice (leave peas and corn whole).
Transfer everything to a large bowl and stir carefully to combine.
Adjust seasoning by adding salt and pepper to taste.
Put in a pretty bowl and spread over top with a thin layer of mayonnaise to'frost'.
Decorate with some cooked carrot strips, sliced olives, capers and gherkin strips.

To go with your Russian Salad:

"Russian Dressing" - 1 1/4 cups
1 cup mayonnaise or salad dressing
1/4 cup chili sauce or catsup
1 teaspoon prepared horseradish
1 teaspoon finely chopped onion
1/2 teaspoon paprika
Mix all ingredients; cover and refrigerate.

Frozen peas

Capers

Juice of lemon
8 fl oz
Carton of double cream

Top and tail beans and remove strings

Cut beans into small pieces

Trim and finely dice celery

Place potatoes in boiling salted water and cook for 5 minutes

Remove with draining spoon, place in colander and rinse under cold water

Add carrots to pan and cook for 5 minutes

Remove and rinse

Add beans, peas and celery to pan and cook for 4 minutes

Remove and rinse
-
Drain cooled vegetables and place in bowl with capers

Add lemon juice and salt and pepper
-
Pour cream over and mix carefully

Pile salad on to a serving plate

Shell and quarter eggs and arrange round the edge of plate
