And now for the scholarly answer!
Adolf Hitler targeted Jews specifically for a few reasons. First, he saw them as imperfect and unattractive. They were not what he saw as a piece of his "master race" (which, by the way, Hitler himself did not even measure up too!) Second, he blamed them for almost all of his failings in life. When he was younger he had wanted to go to Art School to be an Architect but the masters of the school in Vienna said he did not have the mental ability to be successful. Of course the masters of the school were Jewish and so he felt the Jews were all against him. (there are more examples).
Lastly, and this is pure conjecture, the Jews were the largest threat to his plan as they were the most educated of people in Germany. This is hard to understand unless you read the history of the Jewish peoples and understand that they value education more than most cultures do. In early American Universities (including Harvard and Yale), there were quotas placed on the number of Jews who could be admitted to the school because, had they used standard admissions procedures, the University would have been more than 50% Jewish and not represpentative of the at large population. The Jewish population turned to City College of New York and numerous Catholic schools who did not have such a quota. This tells you something about the eduational level of the Jewish peoples. I believe Hitler knew they would not stand for his mass murder ideas unless they were the targets of this idea. Remember, he also targeted gypsies, handicapped, and the "lame" (simply learning disabled or mentally handicapped people). In Hitler's Germany, if you had a reading disability you were targeted as well.

I saw a documentary on Hitler on the History Channel where they noted that Hitler's mother died of cancer and that the doctor that treated her happened to be jewish. This devastated young Hitler because he was emotionally attached to his mother and developed in him a lot of the anger he had for the jewish people.
Later in life when he was involved with the Natzi party and delivering speaches to incite the people the jews were an easy target. He needed some group of people to blame for all of Germany's ills and he couldn't blame all Germans. The jews were an easy target since anti-semitism was fairly widespread in Europe in general for centuries. Going back to the middle ages when there was an outbreak of plague for example, the people often lashed out at the jews.
For Hitler it was an easy transition, blame the jews for the problems in Germany, then eliminate them altogether because they did not fit his ideal of the master race.

They were an easy scape goat, but Hitler didn't just kill Jews. He also killed Communists, some Poles, Soviet and other prisoners of war, homosexuals, gypsies, certain Catholics, some Jehovah's Witnesses, Swingjugend (swing kids), and others.
Basically anybody that was deemed undesirables. Mainly he need someone to point too and say, It's their fault. If you just let me get rid of them then you life will be better. If getting rid of that group didn't work out well some people are stopping me so let me get rid of them too, etc, etc.

Hilter killed the Jews because they were an easy target. In my studying at College I have found that some of Hilters relatives were Jews.

The Jews are "Gods chosen people" yet they killed Jesus. They have been ostracized since God chose them. Seriously, I don't know why the Jews have been attacked for centuries.
