I don't know about honey, that would make them sticky, but to dry fruit (I've done apple slices, pineapple and apricots and cherries like this)

Slice banana into even sized rings and put on a baking tray, put in the oven at the lowest temp you can overnight, in the morning they should be crispy and dry, Try dipping them in honey afterwards?

Use a dehydrator. I've dried other fruits that way too. It's been a while so I don't remember how long, but if you get yourself a dehydrator, it will come with a manual that has times to leave in there and such....I'd highly recommend getting one if you like those type of things and they are healthy too.
Good luck.

You need to get a food dehydrator. These retail for about £70 or so and therefore this is a bit of an investment

go to wal mart and get you a dehydrator- it will come with book that tells you how to make all kinds of stuff - I got mine there and it was only around $ 30.00 -well worth it if you are going to use it more than once
