Because they are usually pre-fried by some manufacturing company, and who KNOWS what they fry them in. (veggie oil isnt all that healthy, olive oil yes, veggie, no)

There are sometimes chemical changes when the oil is heated.The thing that makes the oils you've listed beneficial are the EFAs(essential fatty acids).These are destroyed when the oils are heated to a certain point.Hydrogenation can also take place(saturated fat is completely surrounded by hydrogen molecules,that's what makes it saturated).Thus you've now added trans fats.
Frying in oil can also increase carcinogens(cancer causing chemicals).Frying tends to enpregnate the fries with the harmful components.The benefits of the fats are gone once heated to this degree.

trans fats also where the french fries came from. also the fies have hydrogenated oils and high fructose corn syrup in them which is very VERY unhealthy.

because fried food is fried food, no matter what kind of oil, it still has about 14g of fat per serving, and having a baskey of fries sitting that that oil soaking up all the fat, just makes it all the worse, grated the oil might be better for you...it's still better for you and your heart to bake 'em
